Good evening friends.
Very late getting here today - we've had some internet problems but it seems OK now.
I am aiming to keep meals very simple this week, using what is here but buying whatever it takes to keep things easy. While the weather stays nice and that looks like most of this coming week, salads would be good (if I took a few pounds off over the next couple of weeks, I'd be happy) and for Wednesday which looks like a damp day, I have some vegetable beef soup in the freezer. Other than raspberries and root veggies, the garden is done for this year. I haven't pulled the tomatoes yet and may leave them a little bit longer - see if anything else is fit to eat?
How about you? Any great plans or lots of produce that needs to be dealt with?

Absolutely beautiful weather here the past few days and more to follow, pleasant temps and low humidity, bright sunshine and a light breeze. Maybe a bit of rain Tuesday but that's fine also.
Tomato plants have been removed but have a good amount of tomatoes in varying degrees of ripeness in the kitchen. The plants were getting very sad looking so knew it was time to say good-bye to them till next year...so sad.
Will be hard to plan meals this week as DH will have some minor shoulder surgery tomorrow morning and will temporarily have very limited movement in his arm. Of course it's his primary arm/shoulder involved so most meals, for awhile, will have to be able to be hand held in his other hand. Sounds like a lot of various hot and cold sandwiches on the menu. Guess soup is out...unless I hand him a straw!

I do not really plan ahead. Its just me here and i buy whats onsale at the time i go grocery shopping so i plan my meals around my weekly or biweekly grocery shopping. Sort of in the aftermath of my shopping trips and whatever else i might buy at the local farm market, etc. But i have meals in mind usually. I think i want to make meat balls soon. Almonds, hope your dh will heal quickly! I guess he will have to have rehab, too.

Tasty and Marg, thanks for the nice thoughts. Yes, all went well and faster than expected, it's the healing that always takes time. Marg, yes to phys therapy starting next week. It's absolutely hilarious watching me try to put his sling on him, and then I make him laugh which isn't a good thing right now.

looks like rain here today. not wanting more rain for sure. like the rest of you the garden is about dead. a few tom. plants left & some newe flowers & tiny toms yet growing. doubt they manage to get to full size since the worms & bugs have destroyed most of the tom. crop this yr. her e in kansas city area. i still have 11 zuccini growing & when they've been picked the plant is history! hot pepers stil going strong & heirloom beans to be ddried is quite soarse this yr. i cleared out & inventoried my side freezer & my big upright freezer on saturday...wow! i found meats i had long forgotten about. i inventoried EVERYTHING in both of them. i don't believe i'll have to buy anything but fish for at least 4-6 mths or longer in the meat department. wow! dh is loaded with meat options. just finally out of white fish. i'll watch for a sale on that in the spring usually around here. i am pulling out a frozen meat item & preparing it so will cover several meals. husband doesn't ind so i don't either since i eat little to no ne in the meat department. tons of frozen vegs & lots of canned items & fruits, fresh salad fixings are going to be needed replace this week. running out of walnuts & salad akings but other wise good to go. trying to spend $30 or less i groceries a wk with all the meat bounty in the freezers. sure makes it easier. one day this week when it is to get chilly, i will pull out a portion fo par-boiled beans & make a couple boxes of Jiffy cornbread mix with extra jalepenos & grated cheese in it. we'll add salads & fresh fruit as needed/wanted to each meal. also neding to make a new batch of waffles for the freezer as well as a 17x19 pan of morning glory muffin bars for the frzr. makes good snack &/or breakfast substitute for us. hope everyoen is working on those panry & freezer finds & aking something good & tasty !

Sounds like you have found a real bounty, Doogle. I love it when I discover stuff I'd forgotten about, or that had disappeared to the bottom of the freezer.
I did fairly well using the stuff from the pantry that needed to be used and once our son's wedding is over, I'll get back to being organized!

Sunday I made 4 lbs of meatballs. I put 7 meals in the freezer. Found some corn that was 25 cents an ear. Fixed that all up and got 11 meals froze. Today I am making a huge pot of chili. I had some extra hamburger I needed to use up. I think I will make some hamb. & rice. DH asked for zucchini boat. I don't know how to make a small batch so I'll freeze the rest. A friend gave us several butternut squash. Never had that so guess I need to start reading how to fix it. DH has been home a week and a half from the hosp. Four times in Aug. was more than enough for me. It's really cool here.

You sure have been busy and have lots in the freezer to show for all the work.
I have never cooked squash to use as a vegetable but every year I make a butternut squash and brie soup for a bonspiel at the curling club - never have any left to take home.
Hope your hubby is home to stay now. Hugs to you both as he recuperates.

doogle and judahl, would you mind if I stopped to shop in your freezers? Sounds like so many good things tucked away for great future meals, a great savings for the budget. It's like getting a gift finding something unexpected in the freezer and an even bigger gift when it's already been converted into a meal that just needs reheating.
tasty, if you don't mind, when you have some spare time, could you please share your recipe for butternut squash and brie soup? The ingredients just scream Fall and with the brie in it, I'm guessing that it has a nice mellow creamy consistency and taste.

I actually have a plan for meals this week. Will see how that goes. I live out of my freezers most of the time. Some weeks I don't buy any groceries at all. I do stock up on sales. This week cake mixes are on sale for $1. I do break my own rules on them since I have a number of quick go to bundt cakes that are made with them. Also 4# of sugar is $1.88 and I am out of sugar. Butter is on sale but don't need that right now and will be going to the city in October and I can get it there cheaper than what it is on sale for here.
This week I am planning veal and peppers over egg noodles with Hot Italian cabbage, beef stew with biscuits, (the stew is in the freezer all I need to do is warm it up and thicken it), meat loaf from the freezer with roasted potatoes made from some leftover boiled potatoes, corn flake crusted boneless chicken breast with mashed potatoes and broccoli in cheese sauce and am going to try making paprika wienerschnitzel made with boneless pork chops and spaetzle in bread crumbs and brown butter and some sort of cabbage.
I need to do some baking one of these days. Have no snacks in the house. I love bagel chips so need to make some bagel logs to have in the freezer to make them with. Also some cheesit crackers.
Didn't have much of a garden this year no time and the weather didn't cooperate. I have canned almost enough tomatoes to get me through the winter with what was left over from last year. Have bell peppers to freeze right now and more to pick. There are a few carrots and onions that still have to be dug but that is about it. I should have 2 or 3 more quarts of tomatoes to can yet. Cucumbers did nothing so no pickles this year. Made sauerkraut but that I bought the cabbage when it was on sale.
