Good morning friends.
Today is Nat'l Potato Day. Did you know that there are over 4,000 varieties of potatoes worldwide? Do you have a favorite potato to cook with or eat? Do you have a favorite potato recipe you'd be willing to share here? I like potatoes anyway and everyway. Here is one recipe I've been making for over 40 years---- Country Potato Cheese Soup On stove, cook for 5 minutes: 2 T. butter 3 stalks celery, chopped 2 small onions, chopped Add: 6 potatoes, chopped 1/2 each of salt and pepper 2 c. chicken stock Cook until tender and then blend until smooth in a blender. Return to a pan and add 2 c. of cheddar cheese and 1 c. milk. Stir to mix well. Do not boil.
I have no idea what dinner will be right now. I'll let you know later and will also try to share another potato recipe or two with you. Make your day a good one! Lori

Countrygal, here's the recipe you requested. If you make it, I hope you enjoy it. Foil-Pack Chicken Enchiladas Servings--6 --4 c. shredded cooked chicken (I used chicken breasts) --3/4 c. rinsed canned black beans --3/4 c. frozen corn --1/4 c. finely chopped white onion --1 1/2 c. Mexican style finely shredded four cheese, divided --1 can (19 oz.) enchilada ssauce, divided --12 corn 6" tortillas, warmed Optional: sour cream and cilantro Heat grill for indirect grilling (due to rain, I baked mine in a 350* oven, approx. 20 mins.). Combine chicken, beans, corn, onions, and 3/4 c. each--cheese and enchilada sauce. Spoon 2T. of remaining enchilada sauce onto the center of each of 6 large sheets of heavy-duty foil sprayed with cooking spray. Spoon chicken mixture evenly down centers of tortillas; roll up. Place 2 enchiladas, seam side down, on top of sauce on each foil sheet; top with remaining enchilada sauce and cheese. Fold foil to make 6 packets. Place on grill--cover to grill, approx. 20 mins. Cut slits to release steam before opening packets. Serve topped with sour cream and cilantro if you like.

Good morning Lori. You're up and going bright and early this morning. That potato soup recipe looks wonderful. I'll be saving that one to make once the weather cools down a bit. Enchiladas are not something I usually make but that looks tempting.
The fog is slowly burning off - the humidity is going to be pretty bad again today. Doubt I shall be doing much outside.
I need to go thru the fridge this morning and see what I need from the store and sort out what odds and ends need to be used up - then I can decide what we will eat tonight but I'm thinking maybe a chef's salad.
I'll come back later to see who's doing what.

Good morning - Just browned my pork cutlets and made gravy and in the roaster ready to bake. then peeled and cut up potatoes for mashed potatoes and am now cooking some summer squash and going to make another recipe. Their are lots on the TOH that are there to print off. this one I made some adjustments too, did not want use mayo so used can of mushroom soup instead. Will have some fresh tomatoes that Chuck brought me and will clean up the rest of Cream Puff dessert. Zak is here with Jason so will make his mac and cheese and a hot dog.
Did 2 loads of wash again. Red and I got up early now he wanted out to see what was going on and probably want back in again now. Will do more cleaning this afternoon. Have not heard from DD so don't know what is up with all that, if they are coming or not. I will be prepared.

Good morning to all.
It is a nice cloudy start to our day which is a welcome change. It should still be hot, though. My 7th grader gets out at noon every Friday so can't get much done. I plan on mixing up some cookie dough this morning that I will bake later. Taking my daughters to get our nails done later today.
Dinner will be salmon, asparagus, and salad. Pizza for the fussy ones.... Cookies for dessert.

Good afternoon, friends! It's warm, but not muggy today...clap, clap, cheer, cheer!!! A TOH friend from Texas sent me a box of Hatch chilies. I've never had them so I Googled what to do with them. I put them under the broiler to blacken and then popped them into a paper bag to steam. I'm in the process of peeling and seeding them now....just wanted to sit a spell before finishing. National potato day works for me! We're having stuffed meatloaf (from the freezer) and potato salad tonight. I found a "Hatch Chile Potato Salad" and will try it. The rest of the chilies will go into the freezer. I will also serve some corn salad that I have leftover. Betsy - Your dinner sounds delicious. Have you ever cooked planked salmon on the grill? I haven't had it in a while, but it sure was good. Marlene - I think I may have made that summer squash recipe with the mayo. I made some changes, too, but we liked it. Lori - Thanks for both recipes...will put the enchiladas on my schedule for next week. They were passing out dried beans at the senior center, and I grabbed a package of black beans. I'll prepare them and use some for the recipe. Are you familiar with the Irish chef on the Food Network? Someone posted his Colcannon Potato Soup recipe this morning on FB. It looked really good. Colcannon Potato Soup I suggested combining the recipes for that and Cullen Skink which is a smoked cod chowder! Tasty - We love to have a chef's salad in pita bread! Good Friday morning to one and all-- guess it is almost afternoon, so good afternoon also, LOl. Sun is shining bright so far today but clouds and rain late this afternoon and evening. My granddaughter and great grandson are coming over anytime now to eat lunch with me.She is bringing lunch for us, so no cooking for me. I bought a watermelon yesterday and it is so sweet it is hard to stop eating it. I love watermelon and get so happy when they are in season and tasting so good. I also bought a lot of fresh veggies and other fruit. The corn on the cob is delicious right now, nothing like good Iowa corn. Come on over folks and I will fix you some good corn plus other goodies to go with it.
Marlene as usual you are going strong like an energizer bunny. I don't think that boot is slowing you down at all. The meal you are cooking sounds wonderful and I know they will enjoy it a lot. Makes it nice for you to have someone to eat with and cook for. I sure hope your family can make it to visit with you. Have a good rest of the day.

Good afternoon from Vermont! Less humid but nice and warm! LOL I will take it. We are going to the lake right after work until sunday night so I will off the radar as they do not have wifi/internet at all1 Real rustic camp setting! I love it! We will be kyaking and swimming and just relaxing. Will feel good again. I am taking the makings for the Tacos with me and that is dinner tonight. I had a pastry from a local deli in another town (not my favorite deli town) This is Proctorsville VT. I now hav a client there and have to go see them So I stopped to get lunch and this pastry was so good. Was like a shepherds pie in a pastry. But with peas. LOL So good. Had one of those and one with spinach and artichokes! Yummy! Chris (going to disappear and reappear in 3 days! HC's and all)

Good afternoon. Have been reading today but no posting until now. Recipes sound great. I really need to get back into making different things but until I get through work mid October not much time for cooking. Plus cooking all day in the restaurant, when I get home I just want to relax and have something simple.
I have leftover chicken fajita from last night so will try to make into a quesadilla. Don't think it will fill me up so will probably bake a couple of slice and bake cookies from the freezer later.

Hi ! Just got back home from our day trip. We did not leave until almost 11. We drove and saw a lighthouse nearby. the ones here are small compared to ones in the U.S.. We also ate lunch since we did not have breakfast. DH had a scallop burger-5 fried scallops on a bun. I had a chicken salad sandwich. We drove counter clockwise around the center part of the island. Dh thought to do all the west end too, but it was too late in the day for the 350 km trip. Maybe tomorrow, I'll try to get up and around so we can leave much earlier. Not sure about supper. I'm not hungry but DH probably will want something. I have a pizza mix that I might make. I have pepperoni and some pizza cheese to add to it. I bought a few groceries at a tiny store when DH stopped for gas. I got the makings for a cabbage/ground beef/rice casserole. We stopped by the roadside and picked up a bag of new potatoes, locally grown. They are supposed to be awesome! We saw several farm stand and it's all on the honor system. DH also stopped at a stand and bought some firewood.
Have fun camping out Chris.
Marlene, hope your family comes to visit.

Tammy...when we were there many years ago, we decided to get a "steak" to cook on the campfire. We went to a market...asked for a steak...women there said the "men" were "away"...so we asked for a steak two inches thick...the women carried out a whole leg of beef and proceeded to saw off a steak. Forty years ago, we were not too "up" on beef cuts...anyway, we grilled the steak and TRIED to eat it! Tasted awesome, but tough, tough...I woke up with a sore jaw. LSS...the next day I stewed it...awesome stew!

Hi everyone Late today , had to go to lake this morning and museum now. Really quiet so will shut it down and go home. My company should be there by now.
No combining today still too wet, hopefully tomorrow.
I've decided to take company out for supper that way no muss no fuss. It's called lazy. Lol tomorrow's supper already so that's a bonus.
I'm going to try that squash recipe sounds good.

If this is Friday, it must be pizza night. And it is! We had a nice salad, too. Lori that soup sounds awesome. Kinda like mashed potatoes but pourable. Yummy. Hugs to all.
