What a day! I had so many phone calls come in today--I lost count after 14! The majority were political related and several scam calls. Ugh!! I was happy to turn on the phone tape and escape to the salon to get my hair cut this afternoon, then stopped off to pick up some groceries.
Finally decided to make hamburgers for dinner, but was unable to grill them due to a heavy down pour that fell for over two straight hours! Instead I pan fried them with lots of onions. Sides were homemade French fries that I baked and some marinated cucumbers.
Below is a quick and easy recipe for scalloped potatoes. They were my "go to" recipe during my college days.
Scalloped Potatoes 1 can (10 1/2 oz.) condensed cheddar cheese soup 1/2 c. milk Dash of pepper 4 c. thinly sliced potatoes 1 small onion, thinly sliced 1 T. butter Dash of paprika
Blend soup, milk, and pepper. In buttered 1 1/2-quart casserole, arrange alternate layers of potatoes, onion, and sauce. Dot top with butter; sprinkle with paprika. Cover; bake in 375* oven for 1 hour. Uncover; bake 15 minutes more. 4 to 6 servings.

Thank you for the recipes Lori. Mention soup and I'm first at the table. I can eat it summer or winter.
One of our favorite ways to eat potatoes is to slice a large peeled potato. Put rounds of sliced onions between each potato slice. Set the potato/onion in the center of a piece of foil. Add salt, pepper, and a large pat of butter. Fold foil tightly around the potato and grill for about 1 hour. We like the potato browned. If you do this in the oven make sure to set potatoes on a cookie sheet with sides because the butter sometimes leaks and will make the oven smoke.
I hurried out and cut the front and back grass since the weather man said storms would be here by one. It's now almost 7 and no rain at all. That's okay, I'm glad that job is done. I don't know how Marlene takes care of all her property and still has energy to do all that cooking. God bless her.
Simple dinner tonight just a sausage, onion, & pepper sandwich.

Thanks, cooktocook, for the potato soup recipe. Will try it when it cools down. It's been too hot up to now to make any soups. Sometimes it's even too hot to cook even with the a/c going. Since I am disabled I need simple, easy to cook recipes. Dinner tonight was leftover fried chicken that we purchased at Kroger at noon. We were gone till 1 in the afternoon so I knew that I wasn't cooking tonight, hence the Kroger chicken. Thanks for the foil enchilada recipe. It sounds simple and easy. I think I will try this after we go grocery shopping in a couple of weeks. There are a few things that I am missing for this recipe.

I used to use the cheddar cheese soup for a fondue back in the days...adding beer to thin. Dipped kielbasa or bread into it. Pretty darn good...forgot totally about it until now. Thanks, Lori, will try the spuds!
