Pumpkin Cake with Caramel Icing-Tammy 1 spice cake mix 3 eggs 1 c. water 1 c. pumpkin 1 t. pumpkin pie spice Preheat oven to 350*. Grease and flour a 17" x 12" pan (I used a Bundt pan). Mix 1st 4. Beat 2 min. Add pumpkin, blend on low speed. Pour into pan. Bake 15 minutes (or 35-40 for Bundt). Cool 10 minutes. Spread hot icing over cake. Icing: 1 stick butter 1 c. brown sugar 1/3 c. evaporated milk 1 t. vanilla 2 c. powdered sugar Melt butter. Add brown sugar. Bring to a boil. Cook, stirring for 2 min. Add milk and vanilla. Bring back to a boil. Remove from heat. Add powdered sugar (I sifted it). Mix well and pour on hot cake. I poked holes in the top of the Bundt cake before pouring the glaze over.
