Good Morning ! I did not see any post for today so I will start us off.
I needed to get up early in case the ac repairman showed up. I had baked the raspberry cake last night, but decided to go to bed early (for me) and then try to get up early (for me). I got the cake balls made and they are chilling in the freezer. Just need to get them dipped in white bark coating, then package them. Not sure what time I will make it by the coffee shop. I have to deliver the cake balls, rice krispy treats stuffed with caramel and marshmallows, key lime dessert bars, brownies and tiramisu.
I bought a roast at the store the other day so I will be having roast cooked with potatoes and carrots for supper.
The turkey breast I bought was still frozen in the middle so I needed to cook it for another 20 minutes in the Instant Pot. Even then it was still pink right in the center, so we sliced some outer edges to eat, then I cooked it another 10 minutes. It was a big breast. The only turkey breast I cold even find was one of the Jennie O, which comes packaged in a bag to use in the oven. I just unwrapped it and plopped it in the I.P. I will use the I.P to cook the roast today so I don't have to turn the oven on.
Lori, how is FIL getting along being back home?
Marlene, do you know when your new ring will be ready?
Betsy, I hope all the fires are far away from you. That is a terrible situation. So sad, so much devastation. Worse is the loss of life of course.

Thank you Tammy for starting us off today. Your treats you've baked sound fabulous and I'm sure they'll go quickly. Hopefully the A/C repairman will arrive early in the day so you can get those delivered.
Tammy, I have not talked with FIL in a long time except for him to say thank you for all the cookies I sent him. DH speaks with his parents every day while on his lunch break at work. Just last night he told me that per his DM, he's doing fine and so is she. However, in talking with them daily, DH said he can see they both have some problems...FIL doesn't seem to be able to comprehend things and DH said he has to repeat, repeat, and repeat several more times before he says he understands something. The next day, FIL has already forgotten whatever it may be. He's walking currently with a walker, sometimes a cane, but he wants to do everything he once did and doesn't realize that he may never be able to (such as driving). MIL is just being her sneaky, mean self, playing games-saying one thing to DH, something else to the other children. She is still all about herself and doesn't like the fact that she now has to drive FIL everywhere and she barked that this cuts into "her time." DH is disappointed in his DM and her attitude, but that's her and she's not going to change for anyone.
Between Tammy, Betsy, and Birdy I've been tempted to consider buying an Instant Pot. You gals make it sound better then butter on fresh warm bread. I remember as a young girl going to the home of somebody either my DM or DGM knew and the the lady had a pressure cooker on her stove. Something went wrong and the next thing we knew the beef stew she was making was up on the ceiling. As a kid that scared the pants off me and I told myself I'd never cook with one of those.
Dinner this evening will be leftover country ribs and cold rice salad. I have a zucchini and summer squash that need to be used up too so I'll slice and steam them and corn on the cob. Fresh peaches if we want dessert.
Need to go now. Haven't done much of anything yet today except read old e-mails that have piled up and go for a bike ride. I've got some things that need to get in order for the opening of school next week.

Well....will try this again!! I forgot to send the last one I wrote. Tammy I called last Friday on the ring and they Monday or Tuesday and they would call me. I hope I love it because spending this money for it I do not do that easily. I always thought when I got the ring I would something to make it prettier so hope I have. Is hard to pick out a mounting without sets or diamonds in it then I had to pick out the sapphire I wanted to buy also. So here is hoping I made something my oldest DD will like when I am gone. I have another ring with diamonds for the youngest DD.
Mark came out and got the other Peach Pie after he had Lodge meeting. He loves peaches!! We visited for an hour than he went home at 10:30. So I stayed up and watched t.v. until 11:30 so was harder getting up this morning. So did not freeze one but sometime I am going to try it. I think I did years ago and it came out fine???
Chuck is trying to clean up the pans for Mom's stove. He has them in a bucket and I have some Greased Lightning which I love from the dollar store. So took some over and poured in his bucket. He had some tomatoes laid out for me too. They took piece of furniture that their DGD worked on with Grandpa and Grandma for 4-H. So took to county fair and now he had to take to State fair in Des Moines today for her. Was a cupboard from years ago Chuck's Mom had in her pantry. When they bring it home the DD will sit her t.v. on it so will get good use. This girl is so involved in 4-H has beef, rabbits, hog all going to fair. She has many rabbits!!
Will get ready this afternoon and go to the guy's visitation that did all of my water works and sewer. He was 79 yrs. old when he passed away. He was cremated so had to wait for his 4 kids to come home to have services. His funeral will be in little Country Church east of me which is the Church that Chuck and Jason remodeled. The Church got 300 thousand dollars from a donor. There is only about 16 couples who belong to it. The cemetery is right beside the church.

Afternoon, friends! We just finished cleaning the "wash room" down in the cellar in preparation for getting a new washing machine (another LG front loading one) AND a new "cellar" fridge...just a basic 21cu. top freezer one. It's replacing our 1990 something Amana sidexside. I figured it was "gonna go" anytime! So better safe than sorry!!! I purged both the kitchen and the cellar ones so I'm pretty sure the switch to a slightly smaller freezer will be OK. Tonight we are finishing the Mexican Chicken Skillet from last week. Nice and easy to microwave. It's still terribly hot and humid; I got everything watered while DH was at the dermatologist. I then took my mom to Wallgreens for her supplies. Gratefully home to say in the coolness...do not want to see this month's electric bill, for sure!!! Tammy - Sweet recipes sound delicious! Hope the AC is fixed! Glad that the turkey breast finally cooked through. I've not tried a turkey breast, but I have cooked a whole chicken using the McCormick's "Just a Pinch" Rotisserie seasoning. Came out tasting very much like a deli chicken! I think you know Doreen from Cook's Corner. She has been my friend since I joined Cookin' Seniors on TOH. Anyway she posts recipes using the IP. Maybe you'd like to join the group. www.facebook.com/groups/2278540915504951/Here the entry about the chicken. I cooked mine in my stovetop pressure cooker...really good. " Start with a whole chicken, innards removed. I like to tie the legs. Just makes it easier to wrestle. I make this so often that I buy my whole chickens at Costco buy the case already trussed. Not all Costcos sell them that way, but ours does. 10 chickens, 40 lbs, 38.95. When I get them home, I transfer to gallon zip lock bags and fill my freezer. Back to the chicken I put mine in a 9 ×13 pan and rub with a little oil. Then sprinkle liberally with McCormacks Rotisserie Chicken seasoning. Turn pot on saute, normal When hot add some oil and put chicken in breast side down. When that side is browned, flip with tongs and a skimmer( that is the wrestling part) and Brown the other sides. When chicken is done browning, put your rack in the 9x13 pan and lay the chicken on top of the rack. De-glaze the pan with water or chicken broth. Turn off Put chicken and rack back in pot and cook on manual for 20 minutes. Natural release 10 minutes, then release pressure."
Lori - My mom's Presto Pressure Cooker did blow up, and we had chicken all over the ceiling and a permanently traumatized dog, but today's cookers have an emergency release valve the blows if too much pressure builds up. I find it very easy to use since I have a gas stove. I used to make a rice salad recipe from the Silver Palate cookbook, but haven't in ages. Here's the link for you to see. I read earlier but forgot to post.
We have had a busy day, hubby has been outside all day and I spent the morning canning and eventually got outside later this afternoon. Hubby has been busy making our garden more friendly come the spring when we have a seasonal stream in the back yard as the ground thaws. We had some old culvert pipe that he moved into place and has been moving soil to cover it and give us a pathway across. We plan on changing one of the gardens which will give him some sod to cover this raised area.
We made 3 different blueberry jams this morning which turned out nicely. This afternoon I got out the push mower and cut in and around our vines. Looks like a good crop of grapes this year 👍
I'm going to make bacon and tomato sandwiches for us in a few minutes. We cleaned up the leftovers from the fridge at lunchtime and neither of us is really hungry this evening. So, the ratatouille and chicken we were going to have will now become 'leftovers' and go into the fridge for later in the week!

Lori and Ann -- my pressure cooker memory is green beans all over the kitchen! LOL Tammy, all your treats sound sooooo good. Wish I lived close enough to go to that coffee shop! Marlene, I love that you are making something pretty for you to enjoy and then to know that someone else will enjoy it later. One of my favorite gifts from my mother is the pearl earrings that my dad gave her. They were my "something borrowed" on my wedding day, and she knew that was the only piece of her jewelry I really wanted. They are treasured and worn frequently. Tasty, nice to know that you have a ready-made meal for later! I've done that too when plans changed at the last minute. I bought groceries today to be ready for the DSs coming tomorrow. One is coming earlier in the day and one later that night, so I'm planning to cook a nice meal for Thursday. I have a Boston butt that will go into the crockpot with a couple jars of salsa verde, and then I'll fix some kind of rice -- maybe a vegetable paella -- to go along with it. I'm about ready to go to bed, after I get clothes out of the dryer. There's always laundry, isn't there?
