Tammy, here is the recipe I use for Banana Bread---Lori
Momma Callie's Banana Nut Bread
From The Neelys Show--Down Home with the Neelys
Total--1 hour 30 minutes Prep--10 minutes, Inactive--10 minutes, Cook--1 hour 10 minutes, Yield--8 servings, Level--Easy **I always bake mine in the small mini-loaf pans, but honestly couldn't tell you the cook time and don't have it noted on my recipe**
Ingredients: 1 stick of butter, room temperature, plus more for the loaf pan 1 1/2 cup of AP flour, plus more for the loaf pan 1 t. baking soda 1 t. baking powder 1 t. salt 3 large very ripe bananas 1 cup granulated sugar 2 large eggs 1/2 cup sour cream 1 t. vanilla extract 3/4 cup pecans, chopped Directions: *Preheat oven to 350 degrees F and put a rack on the middle shelf. Grease and flour a 9X5X3 inch loaf pan. (I do not grease and flour. I used a nonstick spray.)
*In a large bowl, whisk together the flour, baking soda, baking powder, and salt. *In a separate small bowl, mash bananas with a wooden spoon, leaving a bit of texture. *Using either a stand mixer or hand held mixer, in a large bowl cream the 1/2 cup butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream, and vanilla--beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
*Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling.

Thanks for the recipes. I spent so much time with Helen then came back to Care for lunch, then did my mani/pedi, that I ran out of time. I will copy the recipes for future use. These bananas will go into the freezer until I get back home.
I ran a couple errands and I picked up a package of bacon, so blt's are on the menu -if we are even hungry. It was a big lunch
CONGRATS Chris! Relax and pamper yourself and take a bath in calamine-lol.

Yesterday I made made some Chocolate Fudge Chip Cookies and Butterscotch Date Cookies. Today my made 12 mini-loaves of the Cranberry Orange Bread that Tasty shared the recipe with us recently and then some Toasted Coconut White Chocolate Chip Cookies. Everything went right into the freezer and I'll share with family back in Michigan when I see them sometime in the next few months.
DH and I are celebrating our 37th wedding anniversary today. We will have grilled fish, baked potato, and a salad for our dinner.

Lori, Happy Anniversary to you and your DH. Enjoy your dinner. No I didn't cut down the yew today. It has been a day from hell. Murphy's law ruled all day. I am tired and headed in to comfy for the night. Will tell you more about my day in the morning.
