Today is National Chocolate Pudding Day. Do you like pudding or would you rather have Jell-O (gelatin)? I myself like both and although I don't make or eat them often, I'd enjoy either put in front of me.
Nancy, happy belated birthday to your DH. Hope he enjoyed his special dinner you were making him yesterday.
Tasty, also belated birthday wishes for your DM. How did she celebrate her special day?
Yesterday once again we had a strong and wild thunderstorm that moved in--I didn't dare get on the computer. Several water spouts and tornadoes were spotted, but we were okay here. With the storm on Sunday, sadly a visitor to the beach was killed due the lightning.
I didn't use all the chicken I defrosted yesterday, therefore, I'll use it up today. Plans are to make a Tex Mex flavored chicken and white bean foil packet. Hope to grill it, but if the weather doesn't cooperate I guess I can toss it into the oven to bake it.

Good morning Lori and all who follow. Mum went out for lunch a couple of times last week with different friends and yesterday 2 of my cousins were going to visit 😊.
Another lovely sunny morning with temps headed up to mid to high 70s. Our craft group will meet today for the last time before we take a summer break but today it is all about food rather than knitting or quilting or painting. One of the ladies has invited us all for a pot luck lunch.
I doubt I will want much supper but hubby will still want to eat so probably chef's salad which will help to clean out the fridge.
Guess I would have to go with pudding rather than jello Lori altho I never think to make either.

Going for blood work and will get few groceries while I am in town. We did get more rain last night. It can quit for awhile now. The ground must of soaked it up as my pump in basement is not running at all. Thank goodness. I hate that noise when it runs but better than replacing furnace and hot water heater. Which has happened.
Will come back home and do some cooking. Will post the recipe for spaghetti lasagna later when I have time.

Good morning. 46 and sunny here this morning. Hopefully this will be the last morning we see in the 40's. Yesterday I had Addison and Annabelle all day so my time was spent in the kitchen packaging up all the food I had cooked and finding room in the freezers for everything. I did get a patch of griddle cakes made and in the freezer. Need to get them packaged up now. Still have a few more things to make but not today. Also did laundry. One load completely done and one in the washer and one in the dryer to finish today. Today I work 4-10 so that will cut my day short as I usually start getting ready about 2. Plans are to get out and get more yard work done before then. Need to get next door before Friday to get that cleaned and ready for guest to arrive on Friday. The last ones left on Sunday and I see they left a bunch of lights on so need to at least stop there today and shut them off. I forgot it yesterday. It is suppose to rain tomorrow and Thursday so will probably do the cleaning one of those days as I don't have kids. Need to make a Walmart trip and bank one of those days also. First thing on the list today is find my kitchen. I have a pile of dishes to get into the dishwasher after I empty it. I also have Lions' work to get done today.
Lori, I do not like jello. Never did as a kid. I do make pudding quite a bit, not only for the kids but also for myself. I love custards which I also consider pudding. That is the way I get my milk since I am not a milk drinker.

Marlene, nice that you got rain but no wet basement. Where we used to live every spring we would have water in the basement. We were between a lake and a river and it wasn't run off we got but rather the water table would get higher and the basement floor. Sometimes it took two pumps running 24 hours a day to keep the furnace from going under. Not fun.

Good morning. I found out yesterday that the store won't be ready until August. I bet he doesn't out in internet up there this year. So far we haven't gotten anything fie our rate increase. Yesterday 2 more sites moved out.
Lori- I like both Jello and pudding but never think to make them. Since you mentioned it I think I will make a truffle for this weekend.
Markene- glad you don't have a wet basement. We have gotten rain here but everyone is saying we need more for the crops.
Tasty- have fun today with your craft group. Did you decide what to make for the potluck?
Bet- don't work to hard.

Elaine, nice to see you here today. Sounds like the new owners aren't doing very well to keep their customers happy. With the increase you would think they could give back a little in services. I now you guys can't move so I sure would be very upset.

Best Spaghetti Lasagna 1# spaghetti 2 eggs lightly whisked (divided) 1/2 c finely grated parmesan 2T olive oil 1 onion chopped 3 cloves of garlic, minced 1# ground beef 2 T tomato paste 1 28 oz. crushed tomatoes 1/4 t dried oregano 3 c ricotta 3 c shredded mozzarella 2T chopped Italian parsley Directions: In lg. pot of salted water, add spaghetti and cook until al dente. Drain water then return the spaghetti to pot. Add 1 egg and parmesan and toss to combine. Meanwhile make sauce. In a large pot over med. heat olive oil. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant about 30 seconds. Add ground beef. breaking up with wooden spoon. cook until meat is done. Drain fat then return the pot to medium heat and stir in tomato paste. Cook 1 minute then add crushed tomatoes and oregano. Season w/salt and pepper simmer 10 minutes. In a med. bowl combine ricotta and remaining egg, Stir to combine. In a 9x13 pan spoon a thin layer of sauce in bottom of pan. top w/1/2 of noodles, cover with about half of the remaining sauce, half of the ricotta mixture and 1/2 of mozzarella. Repeat once more. Bake until cheese is melted and lasagna is warmed through 20-30 minutes. Garnish with parsley.

G'day, everyone! It's the last of the "wonderful" summer days today...we're in for a long heat wave...7 days...ick! Did a big grocery shop by myself this morning because DH was going out to lunch with his friend. Luckily, I got home about 15 minutes before he left so he helped unload the car! Nice! Tonight we are having a Seinfeld "big salad" with some rosemary-garlic bread that I got on the sale table. Took mom to see her PCP...all is well and she's good for another 4 months. Marlene - Thanks for the recipe...ran it off already...looks really yummy! I don't make Jello or pudding. We rarely eat dessert. Have a great evening, everyone! Waving!

I just made this recipe and used 4 eggs and if I make it again I will do 2# ground beef. I also used Bruschetta tomatoes. I did it in 2 pyrex 9" pans. I used a 32oz. container of ricotta also.
Have not had any dinner so will have a little dish of this for supper. I also bought some Rainer cherries. YUMMMM. they are so much better than bing cherries.
We did get a little rain and now it is hot. We are to go back into the 90's. YUK!!Hard to satisfy don't like snow I just want the 70's than I am happy!!

Good Afternoon ! Marlene, Thanks for posting the recipe. I will copy it when I finish here.
I have been lazy today and have mostly played on the computer. Shame on me. There is nothing really that must be done today, though. I made grilled cheese and tomato soup for lunch. Supper will be chili burgers. I'm trying to use things I already have. There are a couple new recipes I'd love to try but don't want a bunch of leftovers before we leave Thursday. We will be back home late Sunday.
I need to get a mani and pedi before we go, so will try to manage that tomorrow. I might try to go and see Helen also. I mentioned that she fell going down the ramp on Thursday. She was in a lot of pain so went to the hospital yesterday so they could check to see if anything was broken. Luckily it wasn't but she is going to a rehab place for a few days until she can get around better. She got dehydrated and wasn't eating, or drinking much while she was home.
I like gelatin and pudding both, but don't make either very often.
Good to hear from you Elaine.
DH took the car in this morning for an oil change and radiator flush. At first he wanted me to go. I told him the guys always come and tell me that I need a new filter, or something. So, he took it in and when he got back he said every lady in there had a mechanic come out and tell them they needed a new this or new that! Glad I did not have to go and deal with that.

Speaking of jello jogged my memory of a cottage cheese, fruit, and jello salad that I made as a last minute dish for a potluck. With our 100*+temps next week this will be on the menu.

I got groceries today and seen small pkg. of cut up pineapple and thought will get some cottage cheese..........guess what I bought ricotta for the dish but no cottage cheese! Sometimes you wonder where the mind is?? Marlene
