Morning! It was a rainy day yesterday with enough rain to make the plants happy! We were busy yesterday...cleaning and cooking. Dinner was grilled lamb that I marinated in Greek seasonings, garlic, olive oil and red wine. The Checca Sauce pasta came out pretty tasty. The recipe makes a lot so I'll be giving some away! We also had some cauliflower salad with a citrus-horseradish dressing. Here's a picture of the pasta. It's really good. Giarda only used basil with the mozzarella. I used basil, oregano, chives, and parsley along with marinated mozzarella balls. I used some of the flavored oil in the place of regular olive oil, too. The only problem was combining the tomato mixture. Directions said to toss it with hot pasta. That didn't work out; I had to keep tossing it to break up the tomato & cheese mixture. Next time I will add the liquid from the tomatoes onto the hot pasta, then, when the pasta is cool, I will add the pulsed cheese & tomato mixture. Back later!

It was a 4:30 morning again. Thank you Red!! So put together a big fruit dish for Church dinner and a bowl of watermelon also. We had maid rites left over, potato salad and cole slaw that was unopened so that will be dinner for everyone today. Just thought we needed some fruit as we have plenty of bars etc. So hope we can serve a lot.
We have rain in forecast again today. I was hoping to get the chance of mowing today so will see. Chuck came and cleaned out my mower yesterday. Wish I had one that was easier to clean out. He jacks mine up and lays down on cement on a carpet and does mine scraping it all out. That is a dirty job.
Pat and I went out for supper last night was going to go to Elkhorn they were closed and on vacation so we went to Darrell's in little town of Hamlin. Was nice to get out for a change. Seems like night time comes and I am always home.
Well will go get dressed and get the day started. Red is back to bed again after being out three times!!What a life he has!!

Good morning. 55 and partly sunny this morning but forecasting for PM showers. The rain we were suppose to have yesterday turned into 2 showers and it appears it may of rained overnight but only got .17" total. I ended up spending the day in the kitchen yesterday. School is out so will have kids everyday. Not sure how many but I know Addison will be here every day. I didn't know until yesterday that she is here for the week. Don't know if longer or not. DS had to cut his phone conversation short. Yesterday morning I put together a huge stew in the crockpot for me and spent time on the computer looking for a couple of recipes and planning what I wanted to get prepared and in the freezer for the kids. They are usually here for lunch and afternoon snack. Sometimes it is also breakfast and a morning snack. Once I decided what I wanted to get made it was a trip to town for groceries. I had bread that needed to get used up so made that into french toast, made 2 dozen cupcakes (I cheated on them and used cake mix). Still need to get a chocolate and a white frosting made for them. Made a pound of macaroni into mac and cheese. The french toast and most of the cupcakes are in the freezer so need to get them packaged up. The stew and mac and cheese are in the refrigerator waiting to get packaged and into the freezer. This morning I made a little over a dozen pudding pops that just went into the freezer. I still need to make griddle cakes and chocolate chip cookie dough to freeze, then come up with more things for lunches. I have enough chicken soup canned to last a little while. All I need to do is cook the noodles when I serve it. I work at 2 today so need to get in the shower, find clothes to wear and get laundry going.
Anne, that pasta looks interesting.
Marlene, sounds like you are getting back into your routine, including Red since he make such a great alarm clock. LOL Nice that you were able to get out to eat.

Bet, You sure were busy cooking yesterday. I know the grandkids enjoy your food.
Tomorrow is DH birthday and for his birthday dinner he has requested Teriyaki Beef Stir Fry. I think I'll use The Pioneer Woman's recipe. My friend lent me her wok.
Not sure what I'm making for dinner tonight.

Yes Nancy I have a zero ratio Dixon mower and is 52"wide. I love it when it is working good which is most of the time. We are to have rain tonight and next 2 days so will be going out to get on it soon. I really would like a nap after being up since 4:30!! Red has slept all the while I was at Church and still is. That is life of Riley!! Everyone enjoyed all the left over potato salad and fruit salad and cole slaw. I also had watermelon. there was some leftover cake and goodies we had also. We had 6 people who stayed and ate with us that were doing Mission work they were headed for the Rose Bud Indian reservation. Really nice people.

Just stopping by quickly. It's been a busy few days - golf and gardening are both time consuming hobbies!
Yesterday we met up with our son and his wife for lunch. They did the longer drive but it let us meet up in a smallish city between our 2 homes. Had a good lunch and a lovely visit with them.
This morning I did a little grocery shopping, including strawberries froma local farm. They made the tastiest jam (excuse the play on words). As the rain we were supposed to have yesterday has settled in today, I think I shall make another batch of jam this afternoon.
Supper will be a spinach, strawberry and chicken salad with a variation or 2 that will use up an avocado that needs to be used etc.

Afternoon, friends! Cloudy day here; it's getting muggy...so what do I expect for summer!!!? Nancy - The Aldi's lamb was fantastic. I don't know how the boneless leg was made into a flat piece of meat, but it grilled perfectly and sliced great. I am going to try to stop in tomorrow for another piece to put in the freezer. Ree's recipe for the Teriyaki Beef Stir Fry looks delicious. I take those recipes and use hamburger...just easier. Will try with burger. Happy birthday to your DH!!! Marlene - I looked up the Rose Bud reservation.... If I read it right...lots of folks living there. Bet - I took the last of DH's "Rat Stew" out of the freezer to have this week. The Checca pasta is very light and tasty. I'd like to use whole wheat pasta next time! Tonight we are finishing the tuna salad and bean salad. Wishing everyone a great Sunday evening.

Good evening friends. I've got about 10 minutes before I put dinner on the table so I thought I'd quickly say hello.
Got the weeding done on one side of the house and all across the front. Will work a few nights this week on the other side. Also gave the bushes a good haircut so we don't have to do that for awhile.
A good strong thunderstorm with lightning began around 1 this afternoon. Knocked the power out for a hour. It no sorry was up and the 2nd round of heavy rains started and out it went again for another 30 minutes. Not fun when it's hot outside and I was trying to begin dinner.
Speaking of dinner, we'll have short ribs, hash brown casserole, corn on the cob, marinated cucumbers, and if we want dessert, a neighbor gave of two small bundt cakes (carrot and vanilla with sprinkles).

Hi ! I meant to post earlier but was having trouble with the site. I finally had to close proboards and reopen the tab. Nothing much to say today. I got up early and made some red beans and rice (a mix) then put it in the crock pot. I made the banoffee pie in a large pyrex dish. I should have boiled the sweetened condensed milk long. I boiled it for about 4 hours but it was still a little bit on the light color side and slightly runny. It worked ok, I just prefer much darker and firmer. Next time I will know to go to a different store and buy the dulce de leche -already cooked to a dark brown.
We came home and both took naps. DH was outside watering when we lost power but only for about 5 minutes. It also did the same thing a couple days ago. He was out in the shed, and never lost power there, but it was off in the rv for maybe 5 minutes.
I think for supper we are going to go to our new Schlotzsky's and get a sandwich.
I hope Betsy and Elza and Chris are enjoying their outings and get aways!

Good evening friends. Lazy day for me today.
The festival was fun and the game after was good. We did not stay for all of it as It started to rain again and the kids wanted to leave. I really did too ! LOL
The Poutine was good but after 6 tastings I had enough. 3 places used tater tots and I did not care for those. A place in Pembroke NH won. Kettlehead Brewers.

The weather today did not encourage me to work outside so instead I made 3 batches of jam, strawberry for us and a Carrot Cake and a Black Forest for the Festival of trees.
Made a spinach, strawberry and chicken salad for supper - really good.

Easy Banoffee Pie
Prep 25 min Total 55 min Ingredients 5 Servings 8 Hide Ingredients Crust 1 Pillsbury™ refrigerated pie crust, softened as directed on box Filling 1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk) 3 ripe medium bananas 1 cup heavy whipping cream 1 tablespoon milk chocolate-coated toffee bits (from 8-oz package) Steps 1 Heat oven to 400°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. Bake 12 to 14 minutes or until golden brown. Cool completely, about 30 minutes. 2 Reserve 2 tablespoons dulce de leche. Spoon remaining contents of can of dulce de leche into center of cooled crust; gently spread to edge. 3 Slice 2 bananas; arrange on top of dulce de leche. 4 In medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Spread over bananas. 5 Slice remaining banana. Arrange banana slices on whipped cream. 6 In small microwavable bowl, microwave reserved dulce de leche uncovered on High 10 to 20 seconds or until smooth. Drizzle over pie. Sprinkle with toffee bits. Store covered in refrigerator.

I used Cool Whip not whipped cream. I did not put the bananas on top. I had to make this early in the morning and hold it until lunch time, so did not want them turning brown. I used the plain bits of brickle-the store I was at did not have the milk chocolate bits. When I ate the pie at a restaurant last week, they topped the pie with sliced almonds.
