I just finished this book. There's a recipe for muffins at the end. Thought it had some unusual ingredients. Dakota's Oatmeal, Blueberry & Orange Muffins Servings: 12 servings
Ingredients 1 cup plain rolled oats 1 cup whole wheat flour 1 tsp each baking powder, baking soda and salt 1½ cups flaked sweet coconut Grated rind of one large orange 1 egg ½ cup liquid pasteurized honey 3 tbls canola oil 1 tbls vinegar Juice of 1 orange and add water to make one cup liquid 1 to 1¼ cups fresh or frozen blueberries
Directions 350 F Line a muffin tin with paper cups. Combine the dry ingredients into a large mixing bowl: Oats, flour, baking soda, baking powder, and salt. Add the coconut flakes and orange rind to the dry ingredients. In separate bowl beat the egg. Then incorporate the wet ingredients: honey, oil, vinegar, juice and water. Add the wet ingredients to the dry mix and stir until moist. Fold in the blueberries. Pour batter into muffin cups, being careful not to let any get on the tin. Bake in a preheated oven 20-25 min. Toothpick should come out clean. Remove from pan and cool on wire rack.

I love my sour cream blueberry muffins Ann but this recipe sounds interesting with the coconut and a touch of vinegar.

Ann, you're right, this recipe does have some different and unusual ingredients. I'm game to give them a try. Thank you for sharing.

Now that I look at it again, it reminds me of the cake where you put three finger holes in the dry mix and add vinegar, oil, and water in the holes. Wacky cake, I think!
