This is from a friend. It would probably bake up as muffins, too. Birdy
Blueberry Bread with Orange
1 egg 1 cup sugar (she uses 2/3 cup) 1 Tbsp. oil 2/3 cup orange juice 2 cups flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 cup chopped walnuts 1 cup blueberries
Mix all ingredients except blueberries. Fold in blueberries after batter is well mixed. Grease bread tin and dust with flour.
Bake 1 hour in a preheated 350 degree oven.

No idea where this one came from Lori but my comments are"nice and moist".
BLUEBERRY ORANGE BREAD 2 tsp butter or margarine 1/4 cup boiling water
3 tbsp grated orange rind 1/2 cup orange juice
1 egg, beaten 2 cups flour (All-Purpose)
1 cup sugar 1/2 tsp salt
1 tsp soda 1 cup blueberries
Confectioner's sugar and additional orange juice for glaze
Mix butter with boiling water, then add the orange rind, orange juice, egg, flour, sugar, salt, baking soda, and blueberries and mix well. Pour into greased loaf pan and bake at 350 degrees for 50 -60 minutes. Glaze, if desired, with thin frosting of confectioner's sugar mixed with orange juice
Another one I like: Cranberry Orange Bread Definite - keeper, moist and orangy 1/4 cup butter, softened 1 cup sugar 1 egg 1 tsp grated orange peel 2 cups all-purpose flour 1 tsp baking powder 1 tsp salt 1/2 tsp baking soda 3/4 cup orange juice 1 cup chopped fresh or frozen cranberries 1 cup golden raisins
In a large mixing bowl, cream butter and sugar. Beat in egg and orange peel. Combine the dry ingredients; add to creamed mixture alternately with juice. Fold in cranberries and raisins. Pour in to a 9x5x3 inch loaf pan. Bake at 350ยบ oven for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes, remove from pan to a wire rack to cool completely. Yield 1 loaf(16 slices)

Thank you also to you Tasty for your recipes for quick breads containing orange juice. Both of these sound yummy and will be on my list to bake very soon.

Tasty--your BB Orange Bread was another one that showed up in my files. I was going to post it today! Maybe we saw it on the old TOH group?
