Good morning.
DD arrived back from Disneyland at 430 am. She was unhappy as after she texted me (3:30am) to say it was about an hour more drive both dh and I fell back asleep. She had to call me when she arrived at the school to wake me up. I immediately dispatched to dh to pick her up but she was grumpy. LOL The school is 5 min from the house. Teenagers! She is fast asleep and I doubt we will see much of her today.
DH and I are taking youngest dd to a Cinco De Mayo celebration downtown and have lunch.
Lori, sorry you have to go handle the in-laws. I feel for you. Don't blame you for not staying at the house as I would never either. Luckily, my mil would not stand for it. LOL.

Good morning, all. I'm tired after working on volunteer work for 2 days and overslept this morning. Moving a little slow today!
I've convinced myself that I don't feel like cutting up the 15 lb. of onions that I picked up off the fields on Wednesday. At least not this morning. I think I will go sit outside this afternoon in the breeze and let the air carry the onion fumes away from me. We'll see how that works.
Has anyone here ever caramelized onions in the slow cooker? I thought I might do that overnight tonight using my Instant Pot as a slow cooker. Then, I thought I would take the top off, turn up the pot to Sautee, boil off the juices, and finish browning them. The only time I tried doing it in a regular slow cooker, I wasn't happy with the results. They just weren't brown enough and were swimming in liquid.
There are so many recipes out there where people have made caramelized onions in the Instant Pot under pressure. They don't look caramelized enough for me. I like them brown like Julia Child's when I make soup.
This is going to be a learning experience, I think. LOL!

They were curious about them when I had mentioned that the catered lunch one day this week had Chicken Riggies and Utica Greens. Good morning. We are sitting outside but it is suppose to be triple digits today. The air is running in the house. Dh will watch the race today. I will be up at clubhouse playing hand and foot. Late this afternoon we have an oil change appointment.then we need to run to grocery store and get bread and milk. We had some more bad news last night. Our neighbor Ron back in Grand Forks passed away. We won't make it back in time for funeral . We leave here the 14th as long as weather cooperates in Kansas.
Betsy-have a fun time at the celebration.
Buddy- that is a lot of onions to cut up. I hope the breeze cooperates. For you.

I had a nice afternoon with my sister at the Spring Festival in Abbeville. I always see old friends and the town square is a great place to shop. We had lunch at the Main Street Coffee Shop -- we shared an order of tomato basil soup and a grilled cheese & bacon sandwich. Then we split a giant slice of coffee mocha cream cake. Need I say more.
I picked up some goodies to send to DMIL next weekend from one of my favorite stores there on the square. It's called Urban 2 Country and they have an interesting mix of antiques and gourmet foods. I got Praline Mustard Glaze, Apple Cranberry Chutney, Wild Blueberry Jam, and an assortment of chocolate truffles. My sister bought maple syrup infused with vanilla and cinnamon -- doesn't that sound delicious?
I'm planning to watch the Derby later on -- my pick right now is Mendelssohn because I like that he is named for a classical composer. We'll see how that works out for me. ;)

Afternoon, friends! Humidity is gone, and it's a banner Spring day here. I did some cooking this morning. Eggs are 99¢ a dozen this week so I made a mess of egg salad. We're having baked Captain's cut cod for dinner tonight along with some steamed broccoli and Aldi's quinoa with veggies. Elza - That maple syrup you sister got is amazing. I got some at Ocean State Job Lot a while back. Your choices sound delicious, too. Betsy - Hope you had a great time at the festival. Did Grumpy & Sleepy turn to Happy by now??? Birdy - I have made the recipes you mentioned several years ago...so good; thanks again. You will probably cringe, but the last time I made Riggies, I used half cream and half Greek yogurt and whole grain pasta!!! I bought Aldi's frozen onion soup and I made a meatloaf using it. I've never made caramelized from scratch. [LOL Remember that part in Jules and Julia where Julia was cutting up onions?] Recently, I was asked to test a recipe for ATK using escarole with Chinese seasonings...good and different, but we like Utica greens better! Mentioning it makes me hungry for it now!!! Hope everyone has a wonderful evening! Waving!

Good Afternoon! Why do Saturdays rush by so fast? We both slept in. I got up and turned on the tv expecting to watch Trisha's Southern kitchen but there was another show on. What happened to Trisha? While shopping at Tractor Supply yesterday we saw some home décor items that were Trisha's brand.
I looked at the computer, watched some tv, then got ready and we went to town. DH dropped me off at the grocery store while he shopped at Lowe's. We stopped and got lunch at Burger King, in the same shopping center.
So far today I have baked a buckeye cake for church tomorrow, but have not really gotten anything else done. I do have the groceries for what I need to make for the Ladies Tea, so I can start on that.
I ran over to Helen's when we got home and took her our small dog kennel for her to use. She is taking the cat over to some friends to stay, as she is going out of town tomorrow and coming home Monday. A gal who drives Helen sometimes offered to take her to Austin to get her hearing aids worked on. That is the closest dealer.
Supper tonight will be pork parmesan, with a side of spaghetti and some cheese bread.

Hello and good evening friends. Besides today being Cinco de Mayo (I made us taco boats for dinner), today was also National Hoagie Day.
Went looking for material for our curtains/drapes and left with 3 books of samples-- thankful we brought them home. The ones we thought were good choices in the store turned out to be too light against our already light walls. Found 6 samples that we like and seem to pop against the wall color, so now it's just a matter of narrowing it down in the next day or two.
Was hoping to go back out to a U-Pick Farm to get blueberries, but DH just wanted to stay home and take care of some projects he has going in the garage. So instead I finished my library book and made up the taco bowls and filling for dinner. We'll shoot for Monday to get the blueberries.
It's been a partly cloudy day and we've been having some rain showers off and on the past 2 hours--77* currently.
My Bolts beat the Bruins last night in OT--was exciting! I think the Kentucky Derby will also be an exciting race--they sure have had a lot of rain today. DH just called me to come out to the tv so I'll end this for now. Take care and may you have a relaxing and peaceful evening.
