Chris--you are indeed sounding happy!
How's the weather in your neck of the woods? My SIL and a friend went to Vermont on Friday for the weekend. I'm hoping they didn't end up getting caught in rain and/or something worse. She's having some minor surgery next Thursday so they wanted to get the trip in before then. It also helped to get her attention off of the procedure which she's been dreading. I hope it worked.
Right now we are getting what I describe as snoraining or raisnowing--in other words, a nasty mix of rain and snow. How revolting.
This afternoon, I'm going to play with my Instant Pot this afternoon and make my lower-fat version of Zuppa Toscana, a copycat from Olive Garden. Their original recipe is very rich--I use low-fat milk with a little slurry to thicken it but refuse to use turkey sausage. My favorite pork Italian sausage from Dino's, which is made about a mile from me, is so good that I won't use anything else. I figure using milk instead of heavy cream makes up for that! I didn't feel like buying a huge bunch of kale for just me, so I'm using a kale/sliced Brussels sprouts combination from Hannaford's. I guess that guarantees that this is a non-traditional Zuppa Toscana! We'll see how well this translates to the pressure cooker.
I've been browsing the internet and YouTube to see how people are using the instant pot. Some things make sense but others are crazy. Why would anyone want to cook beef or pork tenderloin in the pressure cooker? What a waste of expensive meat. Both of those cook so fast on the stovetop or oven--and I think taste the better for it, too. There's some crazy stuff out there!

Just got ready for church. It seems to early to wear white so put on tan pants! Have new top white green and golden yellow Alfred Dunner top. I have gotten 5 new tops lately so need to try them out!
I got my log yesterday w/ name on it. He said he put 2 coats of clear on it but sure did not look like it. So I went to town to town and bought some good sealer for weather. I have given it 2 coats and still need to do the logs it sits on one more coat which he never did a coating of anything on. He should know our weather as he lives about 50 miles from me. When I spend that much I want to last. Chuck is hoping to get over here to put my solar lights in too after I bought more. You know sometimes it is hard to please a woman and I will admit to that! It is just me to make the decisions just more reasons!
Will go have dinner with Pat today and run to town after as I forgot to get smoke bombs for Chuck to do the moles, they are back already and worse than ever. I want the whole yard sprayed but they say it is too early. I don't believe so they are already starting. They say they are after grubs and sure they are in the ground. This farm has every critter you would like to see!
They are doing a heart cath on neighbor lady Sherrie on Monday. So will send her a note to say hello and will miss her in church today. She sits in front of me. So hope she comes home with answers.

Good morning friends.
Chris, Happy to here your dh is back home.
We had beautiful weather here yesterday, 70*. Last night it rained and right now the sun just came out. It will be in the 50's today.
Yesterday was the kick off of the annual softball/baseball parade. Youngest DD wasn't feeling well but she wanted to go. We left before the parade kicked off. She said she felt dizzy, nauseous and her allergies were bothering her. She spent the day on the couch sleeping most of the time and then had a fever. She also missed her first softball game of the season. She is fever free this morning and feels better. I guess it was a 24 hour bug.
Last night we ordered Chinese for the girls and one of oldest DD friend ate over. DH and I ordered Thai.
Going grocery shopping soon.

Nancy, I'm glad to hear that DD is feeling better today.
It's going to be a busy week. We are having revival services at church tonight through Wednesday night, so I will be playing every night. Fortunately the church is providing meals on Monday, Tuesday and Wednesday nights so I won't have to worry about cooking! I am taking off next Sunday, though. I think I'll be ready for a break.
Today for lunch we tried out a new Mexican place in town. I was not impressed. For the same prices as the place we usually go, the food was not as good and the portions were smaller. So I don't see us going there again.

Hello friends. Today is National Shrimp Scampi Day.
I was feeling fine when I went to bed last night, but woke up this morning with a very sore throat and headache. The headache is finally gone, but not the sore throat. Guess I must have subbed in a classroom that had some germs in it last week. I started on Amoxicillin and hope tomorrow I wake feeling better as I have a Pre-K subbing job.
Despite feeling yukky, I got some of the dinner for tonight ready earlier in the day and then I made dinner for tomorrow evening so all we have to do is reheat it when we come in from work. Tonight DH will grill us steaks and our side will be a Bloody Mary Pasta Salad (new to me recipe). Not sure I'll be eating much the way I feel, but I'll taste the salad and let you know what we thought of it.

Afternoon, friends! T'was raining heavily earlier today, but now we have just the threat of showers. Enjoying the greening of the area. Birds are voraciously consuming seeds at this point. I shredded the pork Kalua I made in the stove top pressure cooker yesterday. Will cook the cabbage in the reserved de-fatted juice and will make rice to serve a "all in a bowl meal" this week. Tonight we are having the rest of the German sweet potato salad with some slaw and knackwurst. Last night's dinner was delish. I wrote the three reviews on the TOH regular site and the TOH Recipes FB site this morning, and one lady wrote that she thought I was a bogus tool of TOH in that the reviews were generated by TOH and not written by a "real" person. Imagine that!!! My "momma bears" commented further, and the lady left the group!!! My goodness, I'm not used to such drama especially over food!!!! Chris - I watched Yankee Magazine's weekend edition and saw some interesting stuff about Greensboro, VT's cheese industry...article about Bailey's (sp) bleu cheese had me salivating! I want to check out "weekendwithyankee.com" for recipes. Marlene - Too bad you had to coat your treasure further. Bet it looks terrific now!!! Birdy - I agree with you about some of the InstaPot recipes. Cooking expensive meats in them just isn't what I would do! I like hard steaming my eggs...no need to pressure cook them, IMO!!! Yum on the soup recipe. I'd use the "homemade" sausage, too. Making it ahead enables you to skim extra fat easily once it gets cold. When I make Suppa, I buy frozen kale and further stem it before adding to the soup. Elza - We don't go out to eat much, but I hate it when I spend good money for a disappointing meal. In May, we should be getting a "birthday" coupon from our favorite restaurant for DH...yum! Going to a Lebanese restaurant on Thursday with a fellow retired friend, and I know I'll leave there happy!! Nancy - Glad DD is feeling better. I've not had much Thai food mainly because the dishes I've had tasted of fish sauce. I use anchovies in cooking and love the depth of flavor they impart, but the fish sauce just doesn't agree with my taste buds. What did you have? Lori - Sorry your are feeling ill. Good Afternoon !
Got all my food done and took it to church. The chicken and noodles were gone but I brought home a little of the strawberry cheesecake dessert. We had so many desserts today, very unusual.
I came home and took a nap so I'm sure I'll be up late tonight.
Last night I never made the pot pie since we got a text from Jack saying they were out of brownies and low on several other things. I made the brownies, and already had more caramel delights. Then Jack sent me a text asking if we waned to go out to eat with them. We ended up at Joe's Italian. DH and I shared a 16 inch pizza, so we had lots of leftovers- That can be supper tonight or else lunch tomorrow. so we will be staying home this evening and eating whatever.
It's a bright and sunny day here and so I appreciate that we have ac!
Chris, glad your DH made it home safely.
Marlene, would love to see the log. Sorry that you had to coat it even more.
Lori, so sorry that you are having a sore throat. It's good the headache is gone. I sure hope the meds kick in by tomorrow so you can sub.

Thought I had posted this morning but obviously not.
Spent a chunk of the day in the kitchen. Made pulled pork and a pea & ham soup to feed the guys working on the new floor at the curling club.
I also made Aussie chicken for us for tonight. Long time since we've had that and it is really quick and easy. Made a nice change. Hubby made a salad to go with it.
