My DS just invited me to go with him to the beach on Sunday! Yay!!!! I said yup!!!! So Nancy I will have a lobstah too! In Maine!

Today is sunny but not hot yet. I just have windows open. Will maybe need to turn on the ac by mid afternoon.
I have not done much this morning, mostly doing crosstitch on the tablet. I did get a short ironed for DH. We got it free at the clothing pantry. It is a George Strait brand. I did not know he had a brand of clothing. It looked brand new, and it a pretty yellow and light blue plaid. It had a spot on the top back yoke area, that looked like blood. I used hydrogen peroxide on it and got most of it out. I washed it yesterday and dried it, but it still needed to be ironed.
Youngest Ds is coming with his family on May 11. I think for Mother's Day and my birthday. They will leave on Saturday and go up to Nacogdoches to visit with his brother. They will be staying at the little cottage near the Care center. It is a small, 2 bedroom frame house that gets rented out, or it can be a place for residents to stay if they need to, like after surgery. One lady recently had knee replacement so she could not live in her rv since it had steps, for awhile. It was available so I reserved it. Their dog did not like being at a motel, last time, so this will be better. On Saturday morning we can go over to the center and have pancakes for breakfast. What I am meaning to say is that I need to get busy and deep clean the rv!
I am thawing chicken and hope that DH will cook it on the grill. Not sure of sides just yet.
I was going to reheat some leftover from supper last week, and put a plate in the microwave about 30 minutes ago. I pushed the start button, then walked away. DH came into the kitchen and there was a small fire in the microwave. As it turns out, I had stored leftover hot dog buns up there. The metal twist tie came off and was laying on the glass plate, so it caught on fire. Nothing damaged, so all is well.
I am going into town at 1:00. I have brownies to take in. they are by far, the best seller. Rice krispy treats also go well. I will also pick up some eggs. I buy them from a girl at church. Her DH works at the coffee shop. She had sold all of them Sunday before I had a chance to ask her, so she is going to bring some to the coffee shop, and I can pick them up.
Schwan's comes later today. I am going to get another turkey breast, since it was so good. Very moist and tender, and just the right amount. We can eat a meal and have plenty for sandwiches.
DH had asked the minister and his family (5 kids!) over for dinner. He asked them Sunday morning, but did not tell me until Sunday night! Pastor has extremely high triglycerides, so I have to be careful what I make. It needs to be kid friendly too. He already has planned on heating up a brisket for the main course. I am thinking of doing loaded baked potato salad. For dessert I want to do another fruit tart, like I made for the auction. I might do rainbow jello, I think the kids would like it. We have not set a date yet for this dinner.

Lori I promise I will be good today!! Just today!! I won't get all the meals made today as I had to run to town and get more groceries!! After spending $230 yesterday at Wal Mart (and not all groceries) I need few things to finish. So will finish tomorrow. I am making a Betty Crocker recipe of Chicken - Alfredo Baked Penne so will get three made today. I have all the broccoli cooked so have done the one I posted and will make Bet's Curry Chicken also. Three is enough for today. I save a small portion of each for me so I can taste them. Chuck's like the new recipes and I bought a big package of chicken breasts yesterday so want to use that as I have some already frozen.

Afternoon, friends! We got over 3 inches of rain yesterday. DH has three fans running in the cellar because we have quite a few leaks...not a surprise since we have a rubble foundation. The sun is peeking in and out of the clouds today. I went with DH to Reading, MA. He had a glaucoma eye pressure check...good news...his eye pressure is way down so the laser procedure worked! Lori - Yes the sauce was thin; I forgot to mention that. I guess since I spooned it onto mac & cheese that we didn't really notice. I have leftover gravy that we are going to have with turkey meatballs and spinach noodles. I will thicken it with some cornstarch & chicken broth slurry, and I plan to add more fresh dill. Tammy - When I first got a microwave, I remember putting a thermos in it to warm up some coffee...yikes! The sparks really flew! A turkey breast is a great idea; will put that on my list! Chris - Both DH and I worked kids with emotional problems at a residential treatment center. Back in the day, it was one 4 story building with a kitchen in the basement. Now the units have their own kitchens and there are group homes situated all over the city associated with the original. We still talk about the times when kids would run away and come back infested with lice and the kids who had mega tantrums. My lasting memory was kind of a funny one...one of my girls used a whole jar of Vaseline in her hair on her Afro! I don't remember how many times we had to was her hair!!! DH remembers the boy who got into some pea green paint and totally coated his whole self with it! Marlene - Thanks for posting that recipe; it looks great! I'm going to make a cauliflower salad to go with dinner tonight; best get going. Also want to rice some cauliflower and broccoli stems for another meal. Enjoy the evening!

I decided on deviled eggs, baked beans and some corn on the cob for sides. I am steaming the eggs an hope they peel ok!
Edited to add: I just peeled the eggs, and the shells almost slipped off! These are farm fresh eggs, only 2 weeks old, so I wasn't sure since they are so fresh.
Also, about Helen's cat, Charlotte. She went to the vet yesterday and was fine. Slightly dehydrated. He thinks she must have found some water somewhere-maybe Helen has a leak of some kind? He said after 12 days she would have died with no water at all. She lost about 2 lbs is all. He said she is overweight and he wants her to lose 1 more pound. Helen is feeding her less.

Did anyone see on The Kitchen they took 12 eggs and one in each muffin tin, no water put in 325* oven for 30 minutes take out and put in ice water to shock them. Easy boiled eggs. I am going to make some as I have a recipe for boiled eggs, polish sausage cut in chunks, onions in pickle mix to put in jar and seal in refrig. for awhile.

Mum is doing well Lori thanks. We did have a scare with her when we were in St Augustine - I thought I was going to have to fly over. I called one day and she didn't sound good so called the following morning and she sounded terrible and admitted she felt awful. She kept saying that she didn't know what was wrong but altho the doctor supposedly never said it was flu, that's what I think was wrong. But she has bounced back and seems completely over whatever it was!!
I have a chicken in the oven tonight and we'll have potatoes and carrots with it 😊

Turns out I didn't have to go out today. Yay! Just phone calls though I'm not sure I accomplished anything. It seems it's hard to get things done right the first time. I've been cooking up a mess of green beans this afternoon. Very tasty and plenty for another time. Farmer Mike is still around, Lori. They usually close the first week in May and reopen in November. I've only been there twice in the last couple of years but have seen them at the Thursday Farmer's Market (also closing in May). Hugs, Chris. Sweet dreams to all.

Today was a much less crazy and more productive day. I'm getting ready to put together some barbecue sandwiches with the meat we brought home Sunday. Chips, baby carrots, and fruit to go along.
Sounds like everybody has been busy -- hope we all get a chance to sit down, put our feet up, and take a deep breath this evening.
