I know there are SO many great cooks here, so I thought I'd turn to all of you cookies and cookers (bakers, too) for help.
Our #2 grandson is turning 18 tomorrow. I text him what kind of birthday cake he wanted this year. He replied that he would like an Ice Cream cake ??? ...yikes....I have a Buster Bar dessert that is kind of like ice cream cake, but nothing else.
Do any of you have a recipe you'd like to share with me....PLEASE. He will be gone tomorrow, so I have an extra day to come up with one. Thanks in advance. Charlene

Charlene, I think you need to know his definition of an ice cream cake. There are so many variations. You can make any kind of cookie crumb crust and spread it on the bottom and up the sides of a spring form pan, bake it to just set and fill with his favorite ice. Freeze and when ready to serve spread whip cream or cool whip on top. Also if you have a spring form pan and 2 round cake pans the same size bake the cake the either use them whole or split them in half and layer the cake and ice cream in the spring form pan, freeze and again you can frost it with cool whip or just spread it over the top. These are simple but good. I personally like an ice cream roll which is a chocolate sponge cake made on a cookie sheet, cooled, spread with soften ice cream and then rolled and froze.

There's also an ice cream cake made from ice cream sandwiches and can use caramel and/or fudge topping between thee layers.
Here is one someone in our Recipe Club brought to a meeting and it was very good. Not sure if it's what you're looking for.
ICE CREAM SANDWICH TORTE
24 ice cream sandwiches 16 oz. Cool Whip 2-15 oz. size Mrs. Richardson's hot fudge and/or caramel topping 2 cups salted peanuts, coarsely chopped.
1st layer: 12 ice cream sandwiches placed in a 9x13 pan (cut to fit if needed) 2nd layer: Spread one jar ice cream topping 3rd layer: Spread 1/2 the Cool Whip over top
Repeat the layers, top with chopped peanuts.
I would think you could crush some chocolate wafers and also add those between the layers as Dairy Queen does for their cakes. It's just a basic recipe and you could probably add or change ingredients depending on taste preferences. If he's thinking something similar to an actual Dairy Queen ice cream cake, there are several floating around the internet. Just want to say if you choose one of them, follow the directions exactly. I made one for one of our daughters one year and ruined my torte pan trying to get it out, I bent it. My fault not the recipe.

Made Ice Cream Pretzel Cake for dd's birthday when it first appeared in Quick Cooking in 2005. Have had many requests for it through the years.

Thank you Bette, Almonds and Bonnie for the ideas and recipes. I think the ice cream sandwich one sounds good and easy and I may just go with that. I remember making the ice cream roll many years ago when you mentioned it, Bette. That pretzel looks great and I may try that sometime as well. Charlene

I've never tried the Ice Cream sandwich torte, but I have heard nothing but good things about it. I've also seen different flavored Ice Cream sandwiches, so there are probably some awesome variations of it.You could possibly make it in a spring form pan to make it look more like a layer cake.
