TUESDAY: What's Cookin'? 9/6/16

Our weather has cooled off into the 70's which is my perfect weather and I am loving it! I better enjoy as its heating back up again.

Tonight will be last nights leftovers and I can not wait!!!

I was looking for something at the ".99 Only" store and spotted some packaged fresh Mini Roma's on the vine so I decided to try the roasted tomato pasta dish Lori made a couple of weeks ago.
I added a couple of extra things to the roasting pan with the quartered plum tomatoes, olive oil, S&P, garlic, fresh parsley and a sprinkling of sugar ~ I added one small onion cut into eighths and separated and one small zucchini squash cut into quarters , a little garlic salt and onion powder and approx an 1/8 tsp red pepper flakes.

I tossed it all with lite olive oil (I cant do extra virgin) then roasted it on a high 450 oven for 30 min. tossing half way through. It was so, so good! 😋
That little sprinkling of sugar is the key that brings out the sweetness in the tomatoes. Never did that before. But sure will again.
When it was finished roasting I just dumped the entire cooking sheet, olive oil and all over the cooked pasta and grated lots of fresh parmesan over top...perfetto!💋. To me the roasting gave it the flavor of sun dried tomatoes.


Lori thank you for posting this delicious dish. I was thinking...🤔I bet Italians must do this rustic type dish all the time!🇨🇮

Got an appointment to get this mop cut and highlights put in. Has not been done since January, longest I have let it go! She always cuts it then colors it all over with a dark blonde or very light brown color then weaves strands that she paints with a very blonde color (bleach stuff) with aluminum foil between and I sit under the heat. I look like I could pick up signals from outer space. I have a tendency to grab red (my heritage) so she sometimes puts on a toner. When she's done it has many tones of blonde through it so maybe she uses more than one color while painting it on? I'm usually there a good 5 hours. This process lets me go longer without showing the dark brown...and gray. And now you know everything you never wanted to know about Jan! 😉

Thank You Bet,  I so appreciate this site and how smoothly it is running.  I especially like the monthly recipe list and then the printed recipes.  I know that your efforts are time consuming and I would like you to know that I and I am sure many others sincerely appreciate your efforts.  In times gone by I have spent a lot of time going back through posts trying to locate a recipe that I intended to copy and didn't.  

I love hearing about your mountaintop retreat and all the things you have going on there.  What is the elevation of your property?  Again my thanks.

Sara, so sorry to hear that things are not going smoothly between your daughter & granddaughter. You are stuck in the middle, for sure. Hopefully they'll sort things out quickly. That's when you wish you lived a distance away! 

Lori, hopefully you & your hubby are soon feeling better. Nasty colds & the season is just beginning.

Not much happening here. Daughter & granddaughter are coming for supper. Nothing exciting but it saves them from having to cook after work/school.

Me again. Goodness, looking at the clock snd its almost 5pm back east already. Cant decide whether to eat a late lunch or skip it until dinner.

Just wanted to let Lori know I sent up a prayer for her and her DH.

Im still having a time remembering all these new to me names but sitting around a campfire is something I used to love when we went camping,

Nancy, I hate those have to calls as well. I wait and after wondered why I waited. I had to laugh about the Facebook unfriending....and so it goes. You are probably better off staying off. My son put me on one Christmas and I had nearly 100 friend requests by the next day after he announced it. I like it to keep in touch with skating moms and kids all grown up now with their own kids but sometimes I just deactivate it for awhile!!!

Marlene if memory serves you have a milestone Birthday coming up this month and then I follow with the exact same milestone Birthday in October right before Halloween!

Just seems I remember us being born one month apart?!?

That is so true Jan!! It was a milestone Monday. I survived and stayed put right here in my Redone home. Should add just the out side. I did redo utility the room and bathroom earlier and put in new flooring so rid of carpet there and kitchen, which I love. Now will wait until more funds come in to do carpet in bedroom and living room. Will just stay here through the winter too. Neighbor guy farms my farm and he snow blows out the drive for me.

Jan, so glad to read that you liked the roasted tomato pasta.  I agree, that the sugar brought out the sweetness in the tomatoes.  I like your additions you added to the recipe--think I'll try them too the next time I make the recipe.

Thanks for the prayer too.  Just had DH pound lightly on my back, like they do in the hospital, in hopes that I can break the cough up faster.

Good evening.
DH and I just went out for Gelato! Was so good! So on the way out I spotted and Starbucks! (I knew it was there but...LOL) And got an HC for the 45 minute trip home! I ain't no fool!
Loved the camping and the fire and the eating at the picnic tables! Just enjoy camping!

Jan, you have a good memory.

Hubby and I do still curl and are still quite involved in the running of the club, hubby more so than me these days.  Our Open House for the new season is later this month.
