Our weather has cooled off into the 70's which is my perfect weather and I am loving it! I better enjoy as its heating back up again.
Tonight will be last nights leftovers and I can not wait!!!
I was looking for something at the ".99 Only" store and spotted some packaged fresh Mini Roma's on the vine so I decided to try the roasted tomato pasta dish Lori made a couple of weeks ago.
I added a couple of extra things to the roasting pan with the quartered plum tomatoes, olive oil, S&P, garlic, fresh parsley and a sprinkling of sugar ~ I added one small onion cut into eighths and separated and one small zucchini squash cut into quarters , a little garlic salt and onion powder and approx an 1/8 tsp red pepper flakes.
I tossed it all with lite olive oil (I cant do extra virgin) then roasted it on a high 450 oven for 30 min. tossing half way through. It was so, so good! 😋
That little sprinkling of sugar is the key that brings out the sweetness in the tomatoes. Never did that before. But sure will again.
When it was finished roasting I just dumped the entire cooking sheet, olive oil and all over the cooked pasta and grated lots of fresh parmesan over top...perfetto!💋. To me the roasting gave it the flavor of sun dried tomatoes.
Lori thank you for posting this delicious dish. I was thinking...🤔I bet Italians must do this rustic type dish all the time!🇨🇮
Got an appointment to get this mop cut and highlights put in. Has not been done since January, longest I have let it go! She always cuts it then colors it all over with a dark blonde or very light brown color then weaves strands that she paints with a very blonde color (bleach stuff) with aluminum foil between and I sit under the heat. I look like I could pick up signals from outer space. I have a tendency to grab red (my heritage) so she sometimes puts on a toner. When she's done it has many tones of blonde through it so maybe she uses more than one color while painting it on? I'm usually there a good 5 hours. This process lets me go longer without showing the dark brown...and gray. And now you know everything you never wanted to know about Jan! 😉
