Here we are at the end of summer and as always , I have to ask - where did it go? I know for me this year, some of the weather was just too hot to be outside - I didn't even golf very much it was so hot. Hope you are having a great Labour Day weekend, whether with friends and family or at home getting the kids ready to go back to school on Tuesday.
I did really quite well with using what was in the over the fridge freezer last week and there is so much space there, I don't know what to do with it. I took all the little dribs and drabs of veggies -leeks, celery, carrots, parsnips, peas - as well as some beef gravy from a while ago and added some ground beef - what a terrific pot of soup that made. I made enough that I have 2 containers of it in the freezer for some chilly fall evening.
Also a pack of Italian sausages I had bought made several appearances too but all got used in different ways -some with pasta and sauce, some in a quiche and the last of them went onto a pizza.
Tonight we will have cheeseburger sausages with ??? Hubby fancied burgers from the butcher in town but when we got there he only had great big packs so we opted for sausages on the grill instead. Maybe baked potatoes and baked beans for a change.
I like to try and have one meatless meal each week and very often that ends up as omelets. Right now that would have to be cheese omelets as it is about the only suitable filling I have in the fridge - didn't shop this weekend other than cheese and milk.
We had nachos a couple of weeks ago but still have lots of the nacho chips so should really use them up and there is a jar of salsa in the fridge that needs to be used. I will be out for the ladies golf banquet one night and hubby will be on his own - who knows what he will opt for.
Probably a pasta night - it's quick and easy and I have lots of outside stuff I would like to get done before it is too late so a quick meal would be good. Probably chicken at the end of the week - maybe the aussie chicken I did a while ago or maybe another new recipe from that ever-growing to-try-pile. Saturday we will be eating out.
How do you plan your meals? Do you stick to the plan regardless or are you like me in that it is a guide and maybe won't happen?
