I have but not in a while. Just wondering if anyone likes to use mayo in any of their baking?

I have a recipe for chocolate cake that used mayo. I am sure it is the same as others have. I also have a cookie recipe. Here it is from All recipes.
Mayonnaise Cookies
Recipe By:Kay Mettlen
"A rich, crisp, sugar type cookie that is easy to make. The mayonnaise takes the place of the shortening and eggs. My son says it is possibly the world's best cookie."
Ingredients
1 cup white sugar
2 cups all-purpose flour
1 cup mayonnaise
1 teaspoon baking soda
1 pinch salt
1 teaspoon vanilla extract
Directions
Mix together sugar, flour, baking soda, and salt. Add mayonnaise and vanilla. Mix together very well.
Shape into walnut sized balls. (The dough will be crumbly). Mash with a fork, sprinkle with sugar. Bake 12 minutes in a 350 degree F (175 degrees C) oven.

Oh, yummmm! Thanks so much for sharing that! Definitely will make that one! I tried making brownies using mayo with a basic brownie mix. Not bad! No eggs! But I did add a bit more water.

I've been tempted to make the cake but haven't, yet, that is. When I saw the cookie recipe I think that deserves a try in this house. Thanks for sharing.

I've been making the chocolate mayonnaise cake since high school days in the 50's. I got it from my girlfriend's mother. I still make it as a favorite for chocolate cake, along with another smaller chocolate cake I have made from an old recipe given to me in the late 50's and is stirred by hand.

Use it in place of egg dip before coating chicken or fish in crumbs.

I use mayo instead of oil when making biscuits.

Spread mayo on bread rather than butter when making grilled cheese, adds a little something. It's probably best to use full fat mayo to replace the fat from the butter.
