Good morning friends. May each of you have a beautiful day!
Today we are celebrating both National Peach Pie Day and National Waffle Day. Fresh peach pie is one of my very favorites and in the summer I always try to get over to my favorite Amish restaurant in town for a slice. I don't eat many waffles, but when I have one at home, it is usually just the classic waffle. However, when out for breakfast, it would have to be a Belgian waffle that I enjoy the most. What is your favorite way to enjoy a waffle?
No cooking here today. DH and I have several errands we need to run when he gets home from work, so we'll stop some place for dinner this evening before coming home.

Waffles are not high on my list of favourite things - nothing wrong with them - guess I just don't think of them. Peaches on the other hand - yum.
There will be no cooking here either today. We went out for supper last night for hubby's b'day (which is actually today)because he has a meeting this evening and it's my golf night. We went to our favourite local restaurant and I had my usual portabella pasta - penne in a rose sauce with bacon, spinach and yes, portabella mushrooms. Hubby decided on a spicy salad which he enjoyed altho it was hotter than he was expecting. It was nice to have the time just to sit and relax.
Marlene,how is your foot today? Sounds like the house is coming along nicely. The guys must be close to finished by now. I'm sure they don't want this job to end tho the way you have been feeding them.

Good morning. 56 and sunny. I plan on spending the day getting some much needed work done outside. I am done work. I quit as of last night with no regrets except I will miss working with some of the employees and I left the owner at a bad time with the holiday weekend coming up. However, I gave her my 2 week notice 2 weeks ago today and not sure she took it seriously. I haven't talked to her so will see what she has to say if and when she decides to contact me.

Blessings and may everyone have a great day. Tasty, today is also my DH's birthday . Wishing your DH a very happy Birthday. While you went out last night, we will go out today for lunch. We will meet our firstborn and DDiL at DH's favorite restaurant. No cooking at out house today. Even if we weren't going out, I wouldn't be cooking as I am not feeling well. Had to go to the doctor yesterday as I was so very dizzy. Just a reaction to one of my meds. So being weaned off of it. Cookocook, I love peaches and waffles, but since I'm a diabetic I have to be careful when I have them. My favorite way to eat waffles is just having a plain one with plenty of real butter and syrup. Just a plane jane here. Marlene, how is your leg today? I remember when I had to wear a boot. So uncomfortable. It threw the opposite hip out of kilter and caused some pain on that side. Fortunately it was over in one month.

Morning, friends! It's another beautiful day here...getting a tad more warm and muggy, but it's not nearly as awful as a few weeks ago. The best part is we haven't had to water since the rain storm on Monday...nice break.
I like fresh peach pie, but don't eat dessert very often. If I were to pick a type of waffle, it would be the savory spanakopita ones I made for a challenge a while ago. I took 4 Trader Joe's appetizer wedges and place them point to point in the center of my waffle maker. Toasted them and they "fused" into a waffle. Had a quarter pounder hamburger on top along with a side of tablouli. Very yummy.
Nancy - We finished the scallion pancakes from the first package I bought...terrific. Hey, now those would make excellent waffles, wouldn't they!!!!!
Tasty - Happy BD to your DH. I'd love the spicy salad...love anything spicy!!! Like mushrooms, too. My favorite pizza is a mushroom one. Your pasta sounds delicious.
Not sure what supper will be if we even eat anything...meeting some friends for a late Chinese buffet lunch. I'm already planning on starting with a cup of hot & sour soup so I'll fill up a little before hitting the entrée selections! Bet - Enjoy your "retirement"! LOL Betsy - Calzones sound delicious. Haven't used goat cheese in a while. Countrygal - Enjoy your lunch! I don't remember if I mentioned that we met other friends on Monday...had fish tacos...yum! They are a little messy to eat so when I make them at home, I use those taco boats many times. I also like to line a soft taco with a hard taco and fill it...so when it breaks, it's.held together by the soft taco! Have to do a few things so it's time to get off the computer. Waving to all!

Haven't made up my mind yet as to supper. Last night we order out Beef On Weck sandwiches. They were good and think they are a sandwiched served in the northeast as many have never heard of it before.
I had boneless spareribs and sauerkraut this week, too. And, sloppy joes one night.
I did see a good recipe with Hillshire smoked sausage and veggies and rice in magazine I am going to cut out and try one of these days. It is made in skillet on stovetop and only 20 minutes to make. Maybe some of you have already made it.
Love peach pie and haven't had any since I was a kid and my grandmother always made them in summer. I do have peaches in fridge I bought at veggie stand the other day and will get more when I go today or tomorrow for corn and tomatoes. I want to make tomato and bean salad so need more fresh tomatoes. We like to eat peaches and nectarines out of hand for snack.
Bette, glad you will have more time to yourself since you quit work. I was surprised you quit as I thought you enjoyed it, but it is confining and sometimes just too much with house inside and outside to care for and all your other jobs you were doing, too.
I am still learning the boards here and trying to get around to see all of them so I am familiar with what goes on with each one. You sure did a great job getting this up and running, Bette. Thanks for that.

Enjoy your new found freedom Bet. Sounds as if there's been stuff going on for a while that has made you unhappy and if you don't need to be there, there's no point giving yourself the extra stress.
Betsy - calzones are something I have never made.
You are having the same kind of weather as we are Ann. I'm lovin' it while it lasts - not too much of anything.
OK Posy, you've got me - what are Beef on Weck sandwiches?

Tasty Happy Birthday to your DH and hope he has a good day doing what he likes to do.
Just got dishes over, I fixed a spaghetti pie I had in the freezer with a salad and squash casserole. We also had peach pie w/ice cream for dessert.
Think now I will go out and mow and it will be done for few days again. Never ending job.

Good Afternoon ! Happy Birthday to the birthday boys today!! Add me to the list of not knowing what Beef on Weck is. I bet it's good though! I like waffles, but don't think to make them often. The recipe I like is Bisquick mixed with club soda....that's it. The waffles are so light and fluffy. Then I top mine with butter and molasses! That is the way my grandma ate them, so I did too. I will just use maple syrup in a pinch. Love peach pie!! I have a peach cream pie that if I can find the recipe I will post. It is fabulous. Calorie laden but fabulous tasting!
Today was a travel day. We got away about 10:15 and have driven as far as Woodstock, New Brunswick. We had some biscuits for breakfast and no lunch so I have a cabbage casserole in the oven now. I put it together last night and chilled it overnight. It's layers of cabbage (shredded), browned ground beef and onion, and rice. Then it has tomato juice poured on top.
Tomorrow we will be driving to Quebec. Today was a pretty day-sunny and warm.
If you have never been to Prince Edward Island, I highly encourage you to go. It is quaint and relaxing. It is beautiful with it's patchwork of gold and green fields, a shining pond is often seen. All the farms are tidy and neat. You almost never see a run down building or a junk pile. Lots of country restaurants, and country markets along the way. Of course, if you are an "Anne of Green Gables" fan, then in the central coast there is everything Anne you could ever want. They have scads of lighthouses to see too. Most are not in operation, or they have been electrified.

We're expecting storms coming in during the night so I had to get out and get the grass cut today. I'm always glad when that job is done.
I love waffles and will take them over pancakes any day. I like them with lots of butter and powdered sugar. I'm not a dessert eater but if you offer me pie I'll never turn it down.
Congratulations on your retirement Bet. I hope you enjoy every minute of it.

I haven't thought about dinner yet but don't laugh at my lunch. I picked a tomato and sliced it on toast with a little mayo. Nothing else. It was soooo good. One of the peppers is starting to turn red so I'm looking forward to that.

PEACH PIE 1/2 c. butter 1/2 c. flour 1 c. sugar 4 ripe fresh peaches 1 c. heavy cream 9 inch unbaked pie shell
Mix butter, flour and sugar. Sprinkle half over bottom of pie shell. Slice the peaches (no need to peel) and place over crumb mixture. Sprinkle remaining crumb mixture over. Pour cream over all. Bake 45-55 minutes at 350*. This recipe comes from a cookbook titled The Dallas Experience.

Hi. We mowed my sister's yard today and then I started washing our lawn set. I am trying to keep busy as I have a toothache and its a long time until we are back in Arizona. It's under my cap and just to bite down puts me through the roof. I love peaches and waffles . I bet they would be great together. I am making burritos for supper. DH wants them and it is cool enough to start the oven. The clouds are moving in so it will be raining soon.We sure don't need it. See you later.Elaine
