Just Enough Mini Quiche
Yeah, this can be made with pastry crust...but where's the fun in that? I guess I will have to make room for my guilty secrets. These are mushroom, bacon and ham and cheese but basically at midnight you use whatever is in the fridge; the next one would have been black beans. Two eggs should do 3 regular muffins, if you have a giant muffin pan, use one egg each.
MINI QUICHES
2 eggs 2-3 tablespoons milk 3 slices bread Cooking spray Salt Pepper ANY OF THESE ITEMS FINELY DICED: 2 tablespoons cheese 1 rasher of bacon Half a slice of ham 2 mushrooms Leftover broccoli 1 breakfast sausage
Preheat oven to 350° Cut the crusts off the bread Roll the slices thin and flat Give them a spritz of cooking spray. Mold the bread into 3 greased muffin tin divots. Beat the eggs with the milk, salt and pepper. Put the ham, cheese or bacon in the muffins. Pour in the egg mixture. Bake 12-15 minutes at 350° or until set.
