I read somewhere that there is a there is a potato sized hole where you stomach is. So your dinner should be about that sized. And truly if you work it right ONE potato is perfect for converting into dinner for one. You can eat it boiled, mashed, whipped, fried, baked, grilled; as soup, salad, dumpling. . . and combining it with other ingredients the results are endless and never the same way twice. It's winter in New England so we use a LOT of potatoes. These can be made in any 15-20 ounce casserole, or a 7" au gratin pan. A half sized loaf pan works really well. This is another recipe easily doubled for leftovers.
SCALLOPED POTATO
1 large potato (or 2 small ones), thinly sliced 1 very small onion, thinly sliced ½ cup milk 1 ½ tablespoons grated cheese 1 teaspoon butter 1 tablespoon flour Nutmeg Pepper Salt
Preheat oven to 350°. Mix flour, salt, pepper, nutmeg, & grated cheese into the milk. Layer in potato slices and onion into casserole Pour in some milk, dot with butter every few layers. Bake for 45 minutes.
