Just Enough Latkes and Rösti

"The potatoes in the crisper are starting to get starchy, which is a good thing for this dish, the starch helps the potatoes adhere. Some recipes call for the shredded potato to be soaked to wash the starch off, I am sure there is a reason for it, but when shredding and cooking ONE freaking potato, I am not about to dirty more dishes. You can even get in a debate about whether the potato should be cooked beforehand. I suggest you do it as your mother did, it will make you feel better.
I used one small potato for the Rösti and came up with one very delicious pancake. I used a larger potato for the Latke since it has to carry all that egg and ended up having 4 small to medium Latke. So the size of the dish depends on the size of your potato."

1 starchy potato
1-2 tablespoons cooking oil
Shred potato onto paper towels, or dish towel
Squeeze out as much moisture as possible
Heat cooking oil
Pile shredded potato in the center and flatten into a pancake.
Cook over low-medium heat until starting to brown
Flip over and cook until heated through 6-8 minutes.
POTATO PANCAKES (LATKE)
1 very large potato
1 very small onion
1 egg
Salt
Pepper
1-2 tablespoons cooking oil
Shred potato onto paper towels, or dish towel
Squeeze out as much moisture as possible
Finely chop onion to taste, about 2-4 tablespoons per cup of potato.
Combine beaten egg, onion and potato
Heat cooking oil in skillet
Make 2 or 3 potato piles and flatten into pancakes.
Cook over low-medium heat until starting to brown
Flip over and cook until heated through 6-8 minutes.
