Cranberry Oatmeal Muffins
1 cup rolled oats
1 cup low fat sour cream or plain yogurt
1/2 cup oil
1/4 cup white sugar
1/2 cup brown sugar
1 egg
1 cup flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2 tsp grated orange rind
3/4 cup chopped cranberries
Preheat oven to 400 F
Soak the oats in yogurt just enough to make it moist. Sift dry ingredients into a bowl. In a separate bowl combine oil, sugars and egg until well blended. Gradually fold in the dry ingredients. Add cranberries, orange zest and oats mix.
Put into greased muffin tin and bake for 20 minutes.

They do sound delicious but I'm confused by the yogurt. Do you mean the sour cream? Can you use yogurt instead of sour cream?

Oops, my mistake. Yes either sour cream or yogurt can be used.

When I made these yesterday, I added a handful of chocolate chips that I had languishing in the cupboard and it turned out just fine. Tasting one this morning tho, I think a handful of walnuts or pecans would be a better fit.

Jan, I used frozen cranberries but I think the dried would also work. They will be sweeter tho.
