This is basically creamed chicken with pimento, but it's the pimento that gives it the subtle flavor. Some people add peas, I like a little shallot in mine, but that's me. I also leave out the green pepper, since I can't eat them and hence I double up on the roasted red pepper. I also topped it with fresh parsley since I still have some, lasts for ages if you keep it in water.
CHICKEN A LA KING
2 tablespoons butter 3-4 button mushrooms [1 shallot] [2-3 tablespoons green pepper] 1 tablespoon flour 1/4 cup milk 1 half chicken breast, cooked 1 pimento (or one roasted red pepper)
Slice mushrooms, dice chicken, mince shallot, chopped peppers and pimento. Sauté mushrooms, shallots and any fresh pepper in 1 tablespoon butter until just cooked Remove mushrooms and onion from skillet Add the other tablespoon butter and flour, stir until blended and cook 1 minute until thickened (make roux) Pour in 1/4 cup milk Add chicken, mushrooms, pimento and pepper or shallot if used. Stir and let simmer until heated through. This can be served over anything really: toast, baked potato but most often over rice or puffed pastry.
