Italian Plum Loaf-Jan in BC
1 cup butter or margarine 2 cups sugar 2 tbsp grated orange zest or zest of 1 orange and 1/4 tsp orange extract 1 tsp vanilla 4 eggs 3 cups flour 1 tsp salt 1 tsp cinnamon 1 tsp cream of tartar 1/2 tsp baking soda 3/4 cup sour cream or yogurt ( I use sour cream) 2 cups pitted sliced fresh Italian prune plums 1 cup chopped nuts, optional (didn’t use, allergies in family) Cream butter or margarine, sugar, orange zest (and extract if using) until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Combine dry ingredients, sift all together. Add alternately to creamed mixture with sour cream. Add plums (and nuts, if using) and mix well Put into 2 greased 9 x5x3 inch loaf pans, lined on bottom with parchment paper. Makes it easier to remove. Bake at 350*F for about 50-55 minutes or until done. Test with skewer, ovens differ. Cool on rack in pans for 10 minutes, then remove from pans. Note, I use the zest of 1 orange and the 1/4 tsp orange extract. Also use margarine
