1 cup butter or margarine 2 cups sugar 2 tbsp grated orange zest or zest of 1 orange and 1/4 tsp orange extract 1 tsp vanilla
4 eggs
3 cups flour 1 tsp salt 1 tsp cinnamon 1 tsp cream of tartar 1/2 tsp baking soda
3/4 cup sour cream or yogurt ( I use sour cream) 2 cups pitted sliced fresh Italian prune plums 1 cup chopped nuts, optional (didn’t use, allergies in family)
Cream butter or margarine, sugar, orange zest (and extract if using) until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Combine dry ingredients, sift all together. Add alternately to creamed mixture with sour cream. Add plums (and nuts, if using) and mix well Put into 2 greased 9 x5x3 inch loaf pans, lined on bottom with parchment paper. Makes it easier to remove. Bake at 350*F for about 50-55 minutes or until done. Test with skewer, ovens differ. Cool on rack in pans for 10 minutes, then remove from pans. Note, I use the zest of 1 orange and the 1/4 tsp orange extract. Also use margarine.

Tasty, I don’t know why I use margarine instead of butter. I bake with butter a lot. Perhaps because I’ve been making it since my girls were very little, and they’re now in their mid fifties, maybe I couldn’t afford butter. Have a few other recipes using margarine too and have no problems using either. Never used butter in this recipe though. Loaves turned out perfectly this morning, plums evenly distributed. Sometimes that doesn’t always happen, but tastes good anyway. Jan
