No-Knead Whole Wheat Bread (TOH) 1 package (1/4oz.) quick-rise yeast 1¼ cups warm water (110°-115°) 1 tablespoon honey or molasses 2 tablespoons vegetable oil 1 teaspoon salt 1½ cup whole wheat flour 1½ cup AP flour Vegetable cooking spray
Measure warm water in a measuring cup and stir in yeast. Let it bloom a minute or two. In a large bowl mix flours and salt. To the yeast, add oil & honey or molasses. Stir, add to dry ingredients, and mix well with a spatula. Scrape the bottom of the bowl to incorporate the dry ingredients. Spray a large plate with cooking spray and cover the bowl. Let it rise in a warm place until doubled, about 30 minutes. Stir 30 strokes with a spatula; pour batter into a greased 8x4 loaf pan. Cover and let rise in a warm place until batter reaches edge of pan, about 30 minutes. Bake at 375° (preheated) for 30-40 minutes. Test with an instant read thermometer; temp should be at least 190°. Turn out on a wire rack to cool completely. If it sticks in the pan, gently move a knife around the loaf.
