Raw Apple Cake #3-Elza
Grease and flour a 9x13 pan or 10" tube pan. Preheat oven to 300° F.
Cream together in large mixing bowl: 3 eggs 1-1/3 cups vegetable oil 2 cups sugar
Add 3 cups self-rising flour (or regular flour with 1 tsp salt & 1 tsp baking soda).
Add: 1 tsp vanilla 3 cups chopped apples 1 cup chopped pecans (optional)
Mix well. Bake 35-45 minutes for 9x13 pan, 1 hr - 1 hr 15 minutes for tube pan. Add topping while cake is warm.
Topping: 1 cup light brown sugar 1 stick butter or margarine 1/4 cup evaporated milk 1/8 tsp salt 1 tsp vanilla
Mix in heavy saucepan. Cook over medium heat. Allow mixture to boil 1-2 minutes. Poke holes in warm cake with toothpick, then pour topping over cake.
