Raw Apple Cake, #2-cooktocook
This is another variation of an Apple Cake. I originally made this recipe when I was unable to locate Mrs. Dula's Apple Cake, the recipe I grew up enjoying. Moist and delicious! Lori
Ingredients: 3/4 cup oil 2 large eggs 3 cups finely chopped Granny Smith apples (I used Gala apples) 2 1/2 cups AP flour 2 cups white sugar (I cut down to 1-1/2 cups) 2 tsp. baking soda 1 tsp. salt 1/2 tsp. ground cinnamon (I upped it to 1 tsp.) 1/4 tsp. nutmeg Directions: 1---Preheat oven to 350*F (175*C). Grease and flour a 9"X13" baking pan. (I sprayed the pan with PAM). 2---In a bowl, whisk oil and eggs together. 3---Place apples in a separate bowl and pour oil-egg mixture over top. Let stand while mixing the dry ingredients. 4---Whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg in a separate bowl. Gradually fold flour mixture into apple mixture. Batter is thick but well combined. (It was thick, but I felt dry, so I added 1/2 cup of apple juice). 5---Pour into prepared pan. Bake approx. 45 minutes, until toothpick inserted in center comes out clean. Remove from oven and let it cool completely.
