Fresh Fruit Compote-cooktocook Yield:6-8 servings
Ingredients: 2 large seedless oranges, peeled and sectioned 1 pear, cut into 1/2-inch cubes 1 large apple, cut into 1/2-inch cubes 2 cups cubed fresh pineapple 1 banana, sliced 1/4 cup Grand Marnier (or other orange flavored liqueur) 3 Tbsp. lemon juice 2 Tbsp. sugar Directions: 1-Combine fruit in a large bowl; toss lightly. 2-Combine remaining ingredients, stirring until sugar is dissolved. 3-Pour over fruit; mix well. Cover and chill at least 1 hour.
A GF made this up this morning and just brought over a small bowl for DH and I have for dessert this evening. A quick taste found it to be most delicious and refreshing in our heat. She mentioned that orange juice could be used in place of the liqueur.
