Garlic Chicken-annrms Salem Senior Services Cookbook
1 t. salt 1 t. paprika (I used smoked) ½ t. pepper 1 t. olive oil 3 lbs. Chcken pieces (I used 6 bone-in thighs), skin removed 1 large onion, thinly sliced 1 medium bulb garlic Mix salt, paprika and oil to form a paste. Spread evenly over each piece of chicken (I doubled this amount.) Place onion in the bottom of a 5-6 qt. slow cooker. Arrange chicken over onion. Separate garlic into cloves; do not peel. Place garlic around chicken. Cover; cook on low setting 7-8 hours. Remove chicken, onion and garlic to a serving platter. Squeeze garlic cloves used to cook chicken onto mashed potato, rice, or bread. Enjoy! I added 1 T herbs de Provence in rub.
