Good morning! It's clear and 21°. Wind seems to have abated some. What a day yesterday was...so windy! We got a call yesterday afternoon from a Baldwin administrator...we're officially Baldwin residents! We met all of the requirements! Let the games begin!!!! Breakfast for supper was delicious last night. Tonight we're having tostatas with refried beans, chicken or something from the market, salsa verde, and pico de gallo Besides going grocery shopping and my FB video chat, I have no plans. Ann- Congrats! Glad you passed with flying colors! The wind has subsided here too. Than goodness. Tonight my niece will be here for the weekend and we will have spaghetti with meat sauce and garlic bread for our supper tonight. Baked cod tomorrow.
Well off to bridge building again today. The instructor is not sure if he needs me next week or not. His wife is hme but can not be left alone for more than an hour at a tie. So we will see what I am doing next week.

I have a bone density scan scheduled for this morning -- my first since I started taking Fosamax 2 years ago. Hoping for good results. After I finish this 2nd cup of coffee, I'm going to try and get at least 1 bathroom cleaned before I leave for that.
Chilly and rainy today -- temps in the low 40s all day long.
Also -- those of you who make breakfast sandwiches or burritos ahead and freeze them -- I want to try that and would love to hear what you use and how you package them for the freezer. TIA!

Good morning. It was 9 here overnight and to go to 40's today with maybe some sun. I am still without power and they are saying 11:30 tonight for restoration. I am so tired of listening to the generator whine. We did get internet back early last evening. I need to go out and check my propane to see if I need to call the gas company to get more. That will be a pretty bill for an emergency delivery. I really need to go to work as have work that is due today and tomorrow and Sunday. Problem is I am not sure I can get my garage door open. I can disable the door opener but not sure I can left the door manually up enough to get the car out. Tomorrow we are to have a wintry mix and I have a $1,000 Chocolate Bunny order coming sometime tomorrow that I have to be here to receive.
Ann, looking at any good sales this week. Ours have been pretty slim lately. Only thing this past week was Asparagus at $1.99 a pound and as you said it wasn't that thin limp stuff.
Chris, have fun today working.
Elza, I make the breakfast sandwiches and freeze them. I do egg, sausage and cheese on an English Muffin. I use sage breakfast sausage. I make a patty quite thin and big enough so when it shrinks it is the size of the muffin. I make a scrambled egg in the micro wave. I have a little plastic bowl that is about the same size as the muffin. Slice the muffin and toast it lightly and butter it. Assemble the sandwich including a slice of american cheese. I wrap them in plastic wrap and store them in a zip loc bag in the freezer. I don't usually thaw them but just put unwrap them and put them in the microwave until the are hot.
I need to get moving and go check the propane and decide if I am going to fight with the garage door to get it up.

Good morning one and all.
Slept in a little bit and woke up to a happy Mandy. She is back to feeling herself. It made for a good start to my day. :) We were a bit early so we missed Mary and her gang, but Bill and Sally stopped in to say HI. Mandy was quick and ready to go home when done. I thought she would want off the cart when she saw her friends coming, but I guess her treat was more important to her. LOL
Changing sheets this morning and later today go and pick up an onion. I'll check the sales at Fry's and see if there is any reason to stop there too. Annie has to clean the floors today. Now that I am usually barefoot I can feel what is on the floor and it needs cleaning. For some reason I'm not doing a very good job with the dust mop. It seems all I do is push the dirt and debris around.
March came in like a lamb here. A couple nice days and then next week it cools down some, even the nights will be down. March is a very fickle month all over.
Ann, I'm so very happy for you about meeting all requirements. How very exciting. Now for the packing, oh joy. hehehe
Chris, I hope all goes well in class today. Enjoy your visit with DN.
Elza, I do hope that the BD test comes back with good results.
Bet, oh my goodness, still without power. You are so lucky to have a back up generator. I missed it, why no power, what happened? HUGS
The last of the egg salad for my lunch sandwich and then spare ribs for supper. Not sure how I'll fix the ribs, I'll have a baked potato and some cooked carrots too.
One more cup of coffee and then I had better get to my morning chores.

Hello and good morning to all! Ann, congrats to you and Bill! Way to go!! I bet the two of you are excited as can be and now counting down to your big move in date at Baldwin! Remind me of the date again.
Tasty, DH and I have been picking up the Fresh Market pizzas on and off for the past year and they are delicious. Since the special $6 price is only on Thursdays, we have purchased in the past several at a time, take them home and bake them all. When cool, we wrap each slice and freeze them in a freezer bag. When a quick meal is needed, I defrost and heat. Although it takes a little time and it is slower than the microwave, a warm and low frying pan keeps the toppings on the pizza and will crisp up the bottom. Check out their Chuck and Chicken deals on Tuesdays if you are in the area.
Elza, like Bet, I make and freeze breakfast sandwiches, also breakfast burritos. I usually do egg (scrambled or once over), sausage, and cheese, but over the years I've used bacon or ham cubes or slices, various flavors of cheese, as well as green or red peppers. For the sandwiches, I like English Muffins, but I have used biscuits too. When I make burritos, it is always scrambled eggs, leftover taco meat if I have any, a spoon or two of salsa, shredded cheese of choice, and even leftover hashbrowns. The sausage I normally buy is the Publix original brand in a roll; I cut into slices a bit larger than the muffin as it does shrink when it cooks. Some people do not toast the muffin before making the sandwich, but I do, however I do not butter it. Each sandwich is a slice of sausage, egg, and cheese; wrap in plastic wrap and store in a zip lock bag. I do not defrost, just unwrap and heat in the microwave. The burrito is folded over and around the filling (amount of filling depends on the size of the tortillas); freezer and cook the same as the sandwich.
Bet, I am so sorry to read that you are still w/o power this morning. Whatever you end up doing or not doing workwise today, I hope it will be a day where you can say you got something done that needed your attention. I might have asked you last year, but where do you get your Easter Bunnies from that your Lions group sells?
Chris, hope your Friday is a good day at school. Very nice that your niece will be visiting this weekend---the meals sound good and I'm sure she'll enjoy spending time at your home.
Menu made and grocery list ready to shop at Publix later today. Like Bet, IMO our sales haven't been that great lately; don't need much but I'm sure with prices as they are, I won't get out of there w/o a $100 bill.

Lori, the bunnies are ordered from a chocolate outfit in Canada. I don't remember the name. It is excellent chocolate. They are 6.5 oz solid chocolate bunnies. It is a fund raiser for both the Lions' Eye Institute at Albany NY and many Lions Clubs. We sell them for $5 and make almost a 50% profit and the Institute makes a profit from the ones sold to the clubs.
I am out the door. Late but better than nothing.

Good morning. Dh decided last night that we had alot of running to do this morning so we wouldn't be playing shuffleboard. L9l, he just got up. I was given some little zucchini from the neighbor so I have zucchini bread in the oven. I have a little ham left from the scalloped potatoes so want to make us each an omelet with it.
Ann- glad you are now residents, lol, if only they were finished with it.
Bet- glad you are able to get to work. Also glad you now have electricity.
Chris- enjoy your niece this weekend.
Lori- we never get out of the grocery store without spending more then we planned.
My sister will be riding with my niece and great niece tonight. Niece and her daughter will stay the weekend at an rnb. We will either go out there or to my sisters park. But they may end up here since Kattie is bringing her dog and my sisters park doesnt allow an8mals in her section . Oh well, we have a pool that Aeris can swim in.
Elza- can't help you with the freezing of the burritos or sandwiches as I make them up as we eat them.

Hello! Thanks all for your good wishes about getting accepted into the Baldwin. Back from shopping! Didn't get many deals this week. Escaped with a bill just over $100. I did find some ground turkey to use tonight with a sale tag. I bought some Chinese eggplant and am going to make Bill's friend's recipe for slow cooked eggplant in tomato sauce. I think the fancy name is 'Eggplant Norma'. Will have it next week for dinner. I forgot I bought apples last week on the sale cart to make applesauce...will make that in a few using the pressure cooker. I just chunk them up and place them in the cooker with about a cup of water, bring them to high pressure, and cook for 4 minutes. I put all in my food mill and bottle it. Easy peasy! Bet - Glad you got your power back. What aggravation especially since you had to go to work. Medium thickness asparagus were on sale for $1.99 this week. I got some to make TOH's 'Tuscan-Style Roasted Asparagus' www.tasteofhome.com/recipes/tuscan-style-roasted-asparagus/ I've made them several times. Recipe calls for pine nuts. If I don't have any in the freezer, I use sunflower seeds. Chris - Can't go wrong with a pasta dish!! Any kind is my favorite!! I have some cod in the freezer...fish pie/cakes or chowder are my ideas about how to use it. Have fun this weekend with your niece. Lori - We don't have Fresh Markets, but that's what I do with the Emma's Pub pizzas. We eat half of a 10-inch and freeze the other two slices. My reheat setting on the Breville heats them deliciously. Waving to all. I'm going to make some Pico de Gallo now and then the apple sauce!!!

Getting ready to head out the door for my bike ride (currently 79*), but realized I forgot to say thank you to all of you that suggested turning my pound cake into a trifle. Although I have heard of trifle and seen pictures of them in magazines and cookbooks, I must admit I am not the least bit familiar with them. It is something my mother and grandmas never made, therefore, the reason I've never made one.
I see there are many, many different varieties, so I will take some time and read up on them before I take that on, probably next month. Since it's just DH and myself, I will need to make a much smaller trifle that I am seeing pictures of. Looks good and sounds like a good way to give the dry and bland pound cake a much-needed lift.
I also like the idea of buttering and toasting the pound cake. A neighbor suggested grilling the pound cake, then add whipped cream and fresh fruit on top. She said she did it while camping and found it to be delicious.

Freezer Breakfast Burritos
Here is a great recipe to make in bulk and keep in your freezer. This recipe makes 24 breakfast burritos that you can freeze and use as a quick and easy breakfast.
Ingredients:
* 12 to 16 eggs, beaten * 1 lb ground sausage, cooked (or crumbled links) * 1/2 cup chunky salsa * 2 cups cheddar cheese, shredded * 24 large flour tortillas
Extras: These ingredients are optional. * 1 green pepper, finely diced * 6 potatoes, shredded and fried * jalapeno, sliced or diced * 1 can chopped green chilies * 1-2 clove garlic, finely minced * 1 onion, finely diced * 1 tomato, peeled and chopped * 2 green onions, sliced with tops
Directions:
1. Scramble eggs in large skillet until cooked. Stir in cooked sausage. Add any of the extras you choose. Save the salsa and shredded cheese. 2. Wrap the Tortillas in a damp paper towel and warm in the microwave until they are warm (about 1 minute). 3. Place 1/2 cup of scrambled egg mixture into a tortilla. Then add a little of the shredded cheese and a spoonful of the salsa. Then roll burrito-style.
To Freeze: Wrap each burrito in foil and freeze in single layer on a cookie sheet. When fully frozen transfer wrapped burritos to large zip-top freezer bags and freeze. To Serve: Remove foil and wrap in a paper towel. Cook for about 2 minutes in the microwave. Cook times may vary depending on how much power your microwave has.

Annie did a good job on the floors. I moved the table and chairs so she could get under and capture the mess. With nothing under the bed anymore she can catch the dust bunnies before they infiltrate the rest of the house. Mandy is enjoying her time outside and came in to mooch some chips I was eating with my sandwich. I am just so happy that she is back to her ole self. The sheets have been changed and the dirty ones washed, folded and put away. Now if I get to the dusting I will have accomplished more today than all week....most weeks. I never minded dusting when we lived in the house, last park model, or apartment, but it sure isn't high on my list here. In fact I don't clean as well or as often as then either. Clean enough to be pretty healthy and dirty enough to be comfortable. Oh and lunch is done too. I've decided to take the sour kraut out of the freezer and have that with my ribs. But that will be my supper on Sunday. Supper tonight is unknown.
Fry's has nothing on sale this week that I need so no reason to go there. I only buy sale items in that over priced store. Oh how I wish we had an Aldi's here in Yuma. Better yet, here in the foothills. We are getting another grocery store but it caters mostly to Mexican foods. Not something I care for. Mexican food is way on the bottom of the list of things I like to eat. Boy do I live in the wrong state/area. I may go there just to look around once the novelty or newness wears off.
My head is telling me to get up and away from the computer and get back to work. But my will isn't as strong. LOL

Hello All. I watched a string of movies last nite but sadly can't remember the name of even one of them. Nothing good enough to make a dent in my poor old brain. Never fear, I haven't given up yet. Anyway, kept me busy. Unlike last week, I have nowhere I must be for the weekend. It's always good news when a stack of sundresses/muumuus will see me through a week, if you get my drift. I need to call DD for her (my) hot chicken sandwich recipe. Was my recipe, she improved it. I'm also trying a new marinated Cucumber/Onion/Tomato salad. It's just a little different than the no-fuss one I usually use. I don't add sugar to mine so we'll see. I see snow and ice in the forecast for several parts of the country. Careful all you out and about in it. I want to wish you all a Happy St. David's Day! He is the Patron saint of Wales and they celebrate with leeks and daffodils. Hubby was born in Wales so I always sent him a big bouquet of daffodils to celebrate. ”Dydd Gwyl Dewi”

Thanks so much for all the breakfast sandwich/burrito ideas! I'm filing those away for later -- I'd really like to have a stash of them handy in the freezer. Janet, I love the idea of making a big batch like that. Might have to add Breakfast Burrito day in the near future!
March came in like a lion for us -- cold, windy, and rainy all day, and still raining now. Roads were very wet driving to and from work. DH picked up a pizza from our favorite place so that was a nice Friday night supper.
Bet, very glad to see that your power came back on. Hope you were able to get some of your jobs done, and that the bunnies arrived safely.
Mamma, so happy to hear that Mandy is feeling like herself again. What a relief! As far as I can tell from the results on MyChart, the bone density scan was pretty similar to the previous one. I have an appointment with the endocrinologist next Friday so I will find out what the results actually mean.
Lori, I miss the Fresh Market! We had a couple in Louisville and I loved the baked goods, deli salads, and just walking around in their beautiful stores. One of my favorite things there was the "Kitchen Sink" cookies. The closest one here is in Greenville.
Elaine, a ham & cheese omelet and some zucchini bread sounds just about perfect. Enjoy!
Helen, Happy St David's Day to you as well! I remember that you always got daffodils for your DH. They are one of my favorite flowers. When our older son went to visit his brother in England last summer, they traveled to Wales to explore and had a wonderful time. They visited Portmeirion (we all got Prisoner-related Christmas gifts 😊), Aberystwyth, and Cardiff -- they really enjoyed Cardiff Castle.
