Roasted Pork Chops with Apple and Cabbage from Irish Pub Food
2 T. olive oil, divided
½ medium onion, thinly sliced
2 cloves garlic, minced
1 t. dried thyme
4 bone in pork chops, 6-8 oz, about 1 inch thick
½ t. salt
¼ t. black pepper
¼ c. cider vinegar
1 T. packed brown sugar
1 large McIntosh apple, peeled, and chopped
½ package, 8 oz, shredded coleslaw mix
Preheat oven to 375*. Heat 1 T. oil in an ovenproof skillet over medium high heat. Add onion, cook and stir 4 minutes or until tender. Add garlic and thyme, cook and stir 30 seconds. Remove to a small bowl. Heat remaining oil in same skillet. Season chops with salt and pepper. Add to skillet, cook 2 minutes on each side or until browned. Remove pork to plate. Remove skillet from heat. Add vinegar, brown sugar and ¼ t. pepper. Stir to dissolve sugar, scraping bottom of pan. Add onion mixture, apple and coleslaw mix, do not stir. Arrange chops on top. Cover pan and roast 15 minutes or until pork chops are barely pink in center.
