Chicken Cordon Bleu Casserole-Tasty Rich but nice Cooking spray 1/2 cup (1 stick) unsalted butter, divided 1 1/4 tsp. kosher salt, divided 1 tsp. onion powder 3/4 tsp. garlic powder 1/2 tsp. ground black pepper 1/4 cup all-purpose flour 4 cups whole milk 2 Tbsp. Dijon mustard 8 oz. Swiss cheese, shredded and divided (about 2 cups) 1 (8 oz.) package diced cooked ham 4 cups shredded cooked chicken (from 1 rotisserie chicken) 1 cup panko breadcrumbs 1/2 tsp. paprika 2 Tbsp. chopped fresh chives, for garnish (optional) Cooked rice, egg noodles, or mashed potatoes, to serve. Preheat oven to 350°F. Spray a 13- x 9-inch baking dish with cooking spray. Melt 4 Tbsp. butter in a large skillet over medium. Add onion powder, garlic powder, 1 tsp. kosher salt, and pepper. Cook 30 seconds, stirring constantly. Add flour and cook, stirring, until golden, about 2 minutes. Need to add milk!!! Remove from heat. Whisk in mustard and stir in 1 1/2 cups cheese until melted. Drain any moisture from the ham; stir into sauce. Stir in chicken. Pour mixture into prepared baking dish. Sprinkle over remaining 1/2 cup cheese. Melt remaining 4 Tbsp. butter in a medium microwave-safe bowl in microwave on HIGH in 15 second intervals until melted. Stir in breadcrumbs, paprika, and remaining 1/4 tsp. salt until evenly coated. Sprinkle over the casserole. Bake until the top is golden and the casserole is bubbling, about 25-30 minutes. Sprinkle with chives, if using. Serve with rice, cooked egg noodles, or mashed potatoes.
