Marshmallow Rhubarb Cake-cooktocook A friend of mine made this and brought over some slices over for DH and me. I will admit I'm not a big fan of rhubarb, but I did taste it and honestly can say it was better than I thought it would be. The rhubarb goes to the bottom and the marshmallows come up to the top; no frosting needed. Lori
Ingredients: 3 cups chopped rhubarb 3/4 cup sugar 1/2 cup water 1 (3oz.) box of strawberry gelatin 1 (10 1/2oz.) bag of mini marshmallows 1 box yellow cake mix, mixed per package directions
Directions: 1--Cook rhubarb, sugar, and water together about 6 minutes, till rhubarb is soft. 2--Remove from heat and add dry gelatin; stir to dissolve. 3--Place marshmallows in bottom of greased 9X13-inch pan. 4--Pour prepared cake mix batter over marshmallows and add rhubarb mixture on top of cake batter. 5--Bake at 350* for about 35 minutes, or until brown on top.
