Turkey Corn Chowder-cooktocook Prep: 30 minutes Cook:35 minutes Cooktocook
Ingredients: 3 cups turkey, diced 2 large potatoes, peeled and diced into 1/2-inch pieces 3 celery stalks, sliced 2 carrots, peeled, sliced 1 large onion, chopped 1/4 cup butter2 tsp. garlic salt 1 tsp. thyme 1 tsp. pepper 1/3 cup AP flour 2 15oz. can whole kernel corn, drained 4 cups chicken broth 2 cups heavy cream
Directions: 1--In a large Dutch oven or saucepan, melt butter; add celery, carrots and onions. Cook until vegetables are soft, about 10 minutes. 2--Whisk flour, garlic salt, pepper and thyme together; add to pan and stir and cook for 2-3 minutes. 3--Slowly pour broth, heavy cream and diced potatoes into pan, stir. Cook on high, but do not boil for approximately 15-20 minutes, or until potatoes are tender. 4--Add turkey and corn. Stir and cook until heated thoroughly.
Note: I was gifted a bowl of this soup which DH and I will have for dinner tomorrow. However, I wasn't waiting until then to give it a taste. Yum! Nice taste! Step #3 says not to boil the broth, cream and potatoes, so I found them to be not as soft as I would like. I would recommend cooking the potatoes separately until tender, drain and then add them with the broth and heavy cream. Lori
