Baked French toast casserole for 2-Tasty 2 large croissants sliced in small pieces or bread of your choice 2 eggs ½ c milk Scant ½ cup ½ n ½ 1 tsp vanilla shake of cinnamon – optional ¼ c butter 1/3 c brown sugar 1 tbsp corn syrup Spread the bread in an oven proof pan – I used a 9 x 7, slightly smaller would also work. Beat the eggs with the milk, cream and vanilla and pour over the bread. Leave in the fridge overnight. In the morning put the butter, sugar and syrup in a small pan and bring to a boil then pour over the bread/egg mix. Bake at 375 for about 35 – 40 minutes.
NOTES: We had it with bacon this morning but it would also be good on its own with some blueberries or apple chunks thru it. I used croissants because it happened to be what I had to use up, but any kind of bread you like would work.
