Mum's Lemon Curd-Tasty (This makes about 3 jars plus a little bit.) 4 lemons 1 lb castor sugar - just regular sugar works fine 6 oz butter 4 eggs Grate the lemon rind, then juice the lemons. Put the rind, juice, sugar and butter in a double boiler over boiling water. Let the butter melt and the sugar dissolve. Add the beaten eggs and cook, stirring constantly until it thickens enough to cover the back of a spoon. This is about 15 - 20 minutes. I always beat the eggs with a hand mixer to make sure they are well beaten otherwise it doesn't turn out as smooth.
