Ratatouille Stew-annrms 2 lbs. sirloin tips, trimmed well 4 T. vegetable oil, divided 1 large onion, chopped 1 pound fresh mushrooms, sliced 1 medium eggplant, medium sliced 2 medium zucchini, sliced 1/4 c. Marsala wine 2-3 cloves garlic, minced 1 (28oz.) can crushed tomatoes 1 T. Italian seasonings 1 t. salt or, to taste Freshly ground black pepper, to taste. In large, heavy saucepot, brown beef on all sides in 2 T. oil. Remove meat. Add remaining oil and sauté onion and garlic for 1 minute. Return meat to the pan and add remaining ingredients. Bring to a boil, stirring often. Reduce heat and simmer, covered, 1-1 1/2 hours or until meat is tender.
