Grilled Romaine Hearts with Scallion Cream-Tammy
4 romaine hearts, cut in half extra virgin olive oil 1/4 c. heavy cream 2 T. apple cider vinegar 1 t. Dijon mustard 1 t. freshly squeezed lemon juice sea salt/freshly ground pepper 3 scallions, chopped - white and light green parts Preheat a gas grill to medium-high or light a charcoal grill. Brush the cut sides of the romaine lightly with oil. Place on the grill (directly over flame or hot coals) cut sides down and cook until lightly charred, 3-5 minutes. Combine the cream, vinegar, mustard, and lemon juice in a small bowl. Season with salt and pepper, whisk to blend. Stir in scallions. Arrange the romaine hearts on a platter. Spoon the dressing over them and serve immediately.
