Spring Cleaning Cookies-Tammy
The recipe author states that every spring she finished filming and started in on thoroughly cleaning her house. In the kitchen she made cookies and threw in bits and pieces of opened bags and that is how the cookies got their name.
8 T. unsalted butter, softened 1/2 c. packed light brown sugar 1/4 c. white sugar 1 large egg, at room temperature 1 t. pure vanilla extract 1 1/4 c. all purpose flour 1 t. baking soda 1/2 t. sea salt 2 1/2 c. mix ins ( chocolate chips, peanut butter chips, pumpkin seeds, dried cranberries, walnuts, potato chip bits)
Preheat oven to 350*. Line 2 baking sheets with parchment paper. In a large bowl, use a hand mixer to beat the butter and the sugars until smooth and creamy. Add the egg and vanilla, beat until well blended. Add the flour, baking soda, and salt; beat until just mixed, with no visible signs of flour. Add the mix-ins and stir to combine. Drop the dough by heaping 1 1/2 tablespoons onto the prepared baking sheets, spacing 2 inches apart. Bake, one sheet at a time, until bottoms and edges are lightly browned, 12-14 minutes. Let cookies cool on sheets for 5 minutes. Transfer to wire racks to cool completely. Makes 20 cookies.
