Fresh Corn, Orzo, and Feta Salad-annrms
Ingredients Salt & Pepper, to taste 1 1/2 cups orzo cooked as directed on package, drained & rinsed with cold water. Set aside. Dressing 3 T. olive oil 2 T fresh lime juice 2 t. honey Whisk in a large bowl until well combined, season with salt & pepper. Add 2 ears corn, cut off cobs 3 scallions, sliced (I doubled) 3/4 cup cherry tomatoes, halved (I doubled) 1/2 cup chopped English cucumber ( I tripled) 1/2 cup crumbled Feta (I doubled and used imported) Mix pasta with vegetables and dressing in the bowl. Season with salt & pepper, to taste Fresh basil Add just before serving and toss Serving size says feeds 4-6 as an appetizer. I'd say it would easily serve 8-10 as a side dish. I thought I would need more dressing, but it flavored the pasta even after sitting in the fridge several hours. If needed, though, I was prepared to add some Italian dressing. If I didn't have fresh basil, I think that tube basil would be just as good.
