White Chicken Chili-cooktocook
Servings: 6 Ready in 60 minutes
This is a nice alternative to traditional beef chili; creamy and comforting, simple to make and yet delicious.
Ingredients:
1 small onion, diced
1 Tbsp. olive oil
2 garlic cloves, finely minced
2 14.5 oz. cans chicken broth (I used one 32oz. carton, low sodium)
1 7oz. can diced green chilies
1-1/2 tsp. cumin
1/2 tsp. paprika
1/2 tsp. dried oregano
1/2 tsp. ground coriander (I did not have any)
1/4 tsp. cayenne pepper
salt and pepper, to taste
1 8oz. pkg. of Neufchatel cheese (aka light cream cheese), cut into small cubes
1-1/4 cups frozen or fresh corn (I used one ear)
2 15oz. cans cannellini beans, rinsed and drained
2-1/2 cups shredded cooked chicken (I used rotisserie, but leftover is fine)
1 Tbsp. fresh lime juice (I had 3 limes on counter and forgot to use)
2 Tbsp. chopped fresh cilantro for serving (I didn't use as I don't care for the taste)
Optional for serving: Tortilla chips or strips, Monterrey cheese, sliced avocado (I used pepper jack cheese)
Instructions:
1--Heat olive oil in a large pot over medium-high heat. Add onion and sauté 4-5 minutes. Add garlic and sauté 30-60 seconds longer.
2--Add chicken broth, green chilies, cumin, paprika, oregano, cayenne pepper; season with salt and pepper to taste. Bring mixture just to a boil and then reduce heat to medium-low. Simmer 15-20 minutes.
3--Measure out 1 cup of your rinsed and drained beans. Set aside the whole beans. Transfer the 1 cup of beans to a food processor along with 1/4 cup broth that is simmering. Puree until nearly smooth.
4--Add Neufchatel cheese to soup along with the corn, whole beans and pureed beans; stir well.**
5--Simmer 5-15 minutes longer.
6--Stir in chicken, fresh lime juice and cilantro. Serve with any or all optional items if desired.
Notes:
**When I added the small cream cheese cubes, my mixture looked like it curdled. I was disappointed, but I kept simmering it and stirring. It took a few minutes longer, but the cream cheese finally melted, and the end result was perfect.
