Apple Pie Muffins-Tammy
Batter:
2 apples (Granny Smith preferred but any variety will do), peeled, seeded and chopped into 1/4 in to 1/2 inch dice
2 T. packed brown sugar
1 t. ground cinnamon
juice of 1/2 a lemon
1 3/4 c. all purpose flour
1/4 c. white sugar
1 t. baking powder
1/4 t. baking soda
1/4 t. sea salt
2 large eggs
6 T. unsalted butter, melted
1/2 c. plus 2 T. milk
Glaze:
2/3 c. powdered sugar
splash pure vanilla extract
Preheat oven to 375*. line a 12 cup muffin tin with paper liners.
Heat a medium nonstick skillet over medium-low heat. Add the apples, brown sugar, and cinnamon. Saute until apples are tender, about 5 minutes. Remove from heat; stir in lemon juice. Set aside.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the eggs, butter and milk. Stir with a fork until batter is just combined, with no visible traces of flour. Carefully fold in apples. Spoon the batter into prepared muffin tin. Bake 18-20 minutes, until tops are golden and a skewer inserted comes out clean. Transfer the tray to a wire rack and let muffins cool.
Make the glaze: Combine powdered sugar, vanilla and 4 t. water in a small bowl. Drizzle over muffins. Let glaze sit for 15 minutes. Makes 12
