Sauerkraut + Meatballs-annrms
1 big can of sauerkraut or homemade sauerkraut 12 Meatballs (you can use frozen if you are in a hurry) 1/2 green bell pepper, cut in little cubes 1/2 red bell pepper, cut in little cubes 1 large onion, finely chopped 2 tbsp tomato paste 1 tsp paprika a bit smoked paprika or cayenne pepper 1/2 tsp ground caraway seeds 1 tsp apple butter (optional you can also use a bit sugar) 1 2/3 cups (400 ml) beef broth
In a big pot saute the onions on medium heat in vegetable oil. Then add the peppers, tomato paste and fry a bit while stirring. Then add the sauerkraut, broth, spices, and the apple butter and cover the pot and let simmer 20 min on medium-low heat. Then you add the defrosted meatballs or freshly made fried meatballs. Taste to liking and serve with mashed potatoes
