Glazed Cranberry Sweet Potato Bread-cooktocook Cook:55-60 minutes Yield: 2 9X5 inch loaf pans (I made 10 small loaves, 30-40 minutes)
Baked this yesterday afternoon and it was love at first bite! So moist and delicious! I had purchased a bag of very small sweet potatoes so this was a great way to use part of them up. I'll be baking this in the future to share with family and friends.--Lori
Ingredients: 3-1/2 cups AP flour 1-1/2 cups sugar 2 tsp. baking soda 2 tsp. pumpkin pie spice 1 tsp. baking powder 3/4 tsp. salt 4 large eggs, room temperature, lightly beaten 2 cups cooked mashed sweet potatoes 1 can (14oz.) whole-berry cranberry sauce 2/3 cup canola oil 3/4 cup pecans, chopped
Glaze: 1 cup confectioner's sugar 1/4 cup orange juice 1/8 tsp. ground allspice (I had none so I used apple pie spice)
Directions: 1--In a large bowl, combine the flour, sugar, baking soda, pie spice, baking powder, and salt. 2--In another bowl, combine eggs, sweet potatoes, cranberry sauce, and oil until well mixed. Stir this mixture into the dry ingredients until moisten. Fold in pecans. 3--Pour into 2 greased 9X5-inch loaf pans; bake at 350* until a toothpick in the center comes out clean, approx. 55-60 minutes. 4--Cool 10 minutes before removing from pans to cool on a wire rack. 5--Combine the glaze ingredients until smooth: drizzle over cooled loaves.
