Sausage Casserole-cooktocook Prep:25 mins Cook:1 hour 15mins Additional:5 mins. Total:1hour 45 mins. Servings:12 Very good! Made this last week as a dinner entree and served it with some cinnamon rolls and fresh fruit. Lots of leftovers that reheated nicely. It would be a good dish for a holiday brunch--Lori Ingredients: 1 pound sage flavored breakfast sausage (I used regular flavored and added a small pinch of ground sage) 3 cups shredded potatoes, drained and pressed 1/4 cup butter, melted 12 ounces mild Cheddar cheese, shredded 1/2 cup onion, finely chopped 1 container (16oz.) small curd cottage cheese 6 jumbo eggs (I used large) Directions: 1--Preheat oven to 375*F (190*C). Lightly grease a 9X13-inch baking dish. 2--Place sausage in a large skillet. Cook over medium-high heat until evenly brown. drain, crumble, and set aside. 3--In the prepared baking dish, stir the shredded potatoes and butter. line the bottom and sides of the baking dish with the mixture. 4--In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture. 5--Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool 5 minutes before cutting and serving.
