Unstuffed" Cabbage Roll Casserole II-cooktocook
This has been my "go to" recipe for stuffed cabbage when I don't have the extra time to blanch the cabbage and roll the individual leaves. I got the recipe years ago from Penzey's Spices and love the mild tang from the ginger ale.
Prep Time:15 minutes Cooking Time:1 1/2-2 hours Serves:8
Ingredients: 1 1/2 lbs. ground beef 3/4 cup uncooked white rice 1 onion, chopped 1 Tbsp. Mural of Flavor (if I do not have any in the house, I just omit) 1 tsp. freshly ground pepper 2 eggs, whites only 2 1/2 cups ginger ale 1 1/2 cups ketchup 1 8oz. can tomato sauce 1/2 head cabbage, grated (8 cups)
Directions: 1-Preheat oven to 350*. Grease a 9X13 pan and set aside. 2-In a large bowl, combine the meat, rice, onion, spices, and egg whites; mix well. 3-In a separate bowl, mix the ginger ale, ketchup, and tomato sauce. 4-Place 6 cups of cabbage in the baking dish. Spread the meat-rice mixture of the cabbage. 5-Sprinkle with the remaining cabbage. Pour the ketchup mixture over the top. DO NOT STIR. 6-Cover with foil and bake at 350* for 1 1/2-2 hours, until liquid is absorbed.
