Trail Mix Cookies-cooktocook Got this recipe from my niece back in Michigan. She's a "cookie addict"--loves them all! This recipe is very much like Monster Cookies--yummy with a bit of this and that!---Lori
Ingredients: 1 cup butter, softened 1 cup packed brown sugar (I used 3/4 cup) 1 cup white sugar (I used 3/4 cup) 2 eggs 1 tsp. vanilla 2 cups flour 1 tsp. baking powder 1 tsp. baking soda 3 cups trail mix ( I made my own-1 cup chopped pecans, 1 cup M&M's, 1/2 cup raisins, 1/2 cup dried cranberries) 1 1/2 cups old fashioned oatmeal 1 1/2 granola cereal
Directions: 1--Preheat oven to 350* F. 2--Mix butter and sugars until creamy. Add eggs and vanilla; thoroughly mix. 3--In a separate bowl, blend flour, baking powder and soda. Add flour mixture to the butter and egg mixture and mix until all is combined; do not over mix. 4--Stir in trail mix, oats, and granola. 5--Use a large cookie scoop and shape dough into balls. 6--Place on ungreased cookie sheets (I use parchment paper). Cookies will double in size (I didn't find that to be the case with the batch I made). Bake 13-15 minutes or until the edges of the cookies become a light brown. Remove from the oven and wait 3 minutes before moving to a cooling rack. Note: Dough can be refrigerated and baked as needed.
