Fresh Corn Salad-cooktocook
Salad Ingredients: 6-8 ears of corn 2 Tbsp. oil 1/4 of a red onion, sliced in half 2 cups cherry tomatoes, sliced in half 1 avocado 1 cup spinach
Dressing Ingredients: 4 Tbsp. olive oil 6 Tbsp. apple cider vinegar 1 tsp. sugar 1 tsp. dijon mustard salt and pepper to taste juice from 1 lime (optional, but highly recommended)
Directions: 1--In a small bowl, combine all of the dressing ingredients with a small whisk; set aside. 2--Add a couple inches of water to a large pot or skillet and bring to a boil. Add the corn and cook 3-4 minutes. Drain. 3--When cool enough to handle, brush oil on the corn before grilling until golden on all sides. Remove and cool. 4--Cut corn from cob and add it to a bowl with the remaining ingredients. Drizzle with as much of the dressing as you like. Toss to coat. Chill and serve.
My Notes: Used: 6 ears of corn, 1/2 cup red onion, 1 cup of sliced grape tomatoes, no avocado-forgot it at the store, however would use, 3/4 cup fresh spinach, torn into smaller pieces, 2 tsp. sugar. I used all of the dressing as the ingredients soaked it right up quickly. Although the lime juice is optional, I strongly suggest it as it gives the dressing such a fresh taste.
