Apricot Chicken-cooktocook
Made this for dinner last night and found it to be very tasty; the chicken was super moist and just melted in my mouth. Served it over rice.--Lori
Ingredients: 2 Tbsp. margarine or butter 1 tsp. salt, opt. 8 skinned/boned chicken breasts halves (I only had 6 halves) 1 Tbsp.Dijon mustard 2 Tbsp. slivered almonds 2 Tbsp. olive oil 1/2 cup flour 3/4 cup apricot preserves 1/2 cup nonfat yogurt
Directions: 1--Preheat oven to 375*. Melt margarine with oil in a shallow baking pan. 2--Shake chicken in a bag containing flour and salt(if using) until chicken is coated. 3--Place chicken in a single layer in baking pan and bake for 25 minutes. 4--Combine apricot preserves, yogurt, and mustard. Spread mixture on the chicken and bake for another 30 minutes or until done. 5--Before serving, brown the almond silvers in a toaster and then sprinkle over the chicken.
